Ingredients
- 8 ounces cream cheese room temperature
- 1 cup sour cream
- 1 ½ tablespoons fajita seasoning mix
- 4 cups chicken breast – cooked and diced
- 1 cup white rice instant – uncooked
- 1 green bell pepper seeded and diced
- 1 red bell pepper seeded and diced
- 1 onion diced
- 2 cups cheddar cheese shredded fiesta blend – divided
Additional sour cream, diced tomatoes, diced avocado, and freshly chopped cilantro as garnish
Instructions
- Preheat the oven to 350°.
- Prepare a 9 x 13 baking dish with nonstick cooking spray.
