My friends, I have been on a cookie kick lately. You’ve probably noticed with all the cookies around here lately. But this is the season for it, isn’t it?
Seems we always have some sort of gathering going on & I need unique & delicious recipes to serve. No one wants the same ol’ party foods at every holiday party they attend. So I came up with these super soft & chewy RITZ Cracker Oatmeal Cookies that literally satisfy every cookie craving.
The thing that I love the most about holiday gatherings is food & fellowship. There is something to be said about gathering with people you love & sharing delicious food with them.
That being said, I sure love food & you will almost always find me hanging around the buffet table when we are in a big group. I love to graze & nibble on all the good food there is to enjoy. I love to go back & forth between the savory & sweet foods, because who can really decide? They are all so good.
Oatmeal Chocolate Chip Cookies Recipe
This is why I love these Chewy RITZ Cracker Oatmeal Cookies so much. These cookies are not your typical oatmeal cookie. These gems have delicious, buttery RITZ crackers that we all know & love crushed up into the cookie dough & baked on in there. I can hear you saying YUM, right?
We absolutely love RITZ Crackers in this house. They are not only a staple at all our gatherings to enjoy with all our snacks, but they are a part of so many of our everyday recipes too. We love them so much that I felt like they shouldn’t just be enjoyed as a savory snack, these should be a part of the goodies too.
Adding the RITZ Crackers to the oatmeal cookie dough adds that perfect saltiness that balances the sweetness of the chocolate chunks. Unlike most oatmeal cookie recipes, this one doesn’t have the added flavor of cinnamon. This really lets you enjoy the flavor of those buttery RITZ Crackers that really make these oatmeal cookies better than any other.

Where is the best place to find RITZ Crackers?
I like to pick up my RITZ Crackers when I do my weekly Walmart order. It makes it so easy because they are already featured in my “favorites” list, so I can just quickly add them to my cart each week along with all the other ingredients needed for my holiday recipes.
Are there any deals on RITZ Crackers right now for the holiday?
YES! While there are always great deals to be had when shopping at Walmart, right now they have these Family Size RITZ crackers on Rollback for $2.98! That is a great deal, especially with all the holiday parties we have happening this time of year.
What is the best way to store leftover RITZ Cracker Oatmeal Cookies?
I find that these cookies will stay soft & chewy for a long time, even when laying out on a serving platter for the duration of a party. But once the party is over, just place them in a large airtight bowl or zip-top bag & store at room temperature. This keeps them soft & chewy for a longer period of time. But please enjoy within 3-4 days. OR you can always use smaller zip-top bags & send some home with guests.
How many can this serve?
This recipe makes approximately 16 cookies. So given that most people will have 2 on average & you will probably have other things for people to enjoy, this recipe should be perfect for most holiday entertaining.
Soft Oatmeal Cookies
Can this recipe be doubled?
Yes, you sure can. If you are making these for a large party or to give away to neighbors, this recipe works great when doubled.
Should I use salted or unsalted butter?
I personally use whatever I have on hand. But if you are watching your salt intake, stick with the unsalted butter for these cookies. I wrote my original recipe using unsalted butter but then tried it with salted butter & liked them just the same.
Do I need to chill the dough?
Yes. You absolutely must chill this dough or the cookies will spread too much when you bake them. For beautiful, thick & chewy cookies, chilling is essential. I find that the easiest way is to whip these up in the afternoon & pop the dough in the fridge to chill overnight. Then I bake them the next day.
HOW DO YOU MAKE Chewy RITZ Cracker Oatmeal Cookies?
- In a large mixing bowl, combine butter, granulated sugar & brown sugar & beat well until light & fluffy.
- Add in the egg, milk & vanilla & beat until well mixed.
- Slowly add in the salt, baking soda & baking powder, mixing until just incorporated.
- Slowly mix in the oats, flour & crushed RITZ Crackers until just combined.
- Fold in the chocolate chunks.
- Cover the bowl & refrigerate at least 1-2 hours.
- Once dough is properly chilled, preheat oven to 375 degrees.
- Line your baking sheets with parchment paper & drop tablespoon-sized scoops of cookie dough on the parchment, placing the scoops approx 1-2 inches apart.
- Bake for 8-10 minutes.
- Cool on the baking sheet for 2-3 minutes before transferring to a wire rack to cool completely.
How do I properly measure the flour?
The official way is to spoon the flour into the measuring cup & level off. However, when making these cookies I usually fluff the flour with a spoon & then gently scoop it into the measuring cup & then level that off before adding to my dough mixture. Make sure your flour isn’t packed down when scooping or packed tightly into your measuring cup. This will make your cookies too dry.
How soft should my butter be?
So, when we are talking about softened butter, it is important that it not be so soft (or nearly melted) that it won’t hold the dough together. The butter should be room temperature so it can be blended easily with the sugar. This also protects your beaters from damage that can happen when trying to blend butter that is too firm.
Do I really need rolled oats?
So the rolled oats will give the right consistency with the moisture of the dough. This is what makes the cookies chewier & gives them more texture. I highly recommend sticking with the rolled oats for these cookies. I don’t recommend using quick cook oats or instant oats.
Can I make this recipe with another type of chocolate?
Yes- that would work just fine. I have made these with white chocolate, semi-sweet chocolate chips, peanut butter chips & butterscotch chips too. Each one is delicious in their own way.

Chewy RITZ Cracker Oatmeal Cookies
Ingredients
- 1/2 cup crushed RITZ Crackers
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 2 tbsp milk
- 1 tsp vanilla extract
- 3/4 tsp coarse sea salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1-1/2 cups rolled oats
- 1 cup all-purpose flour
- 3 bars chocolate bars broken into chunks (divided) 1.55 ounces each
Instructions
- In a large mixing bowl, combine butter, granulated sugar & brown sugar & beat well until light & fluffy.
- Add in the egg, milk & vanilla & beat until well mixed.
- Slowly add in the salt, baking soda & baking powder, mixing until just incorporated.
- Slowly mix in the oats, flour & crushed RITZ Crackers until just combined.
- Fold in most of the chocolate chunks.
- Cover the bowl & refrigerate at least 1-2 hours.
- Once the dough is properly chilled, preheat oven to 375 degrees.
