A must make during college basketball games.
Oh my goodness- it’s time for college basketball games! Are you basketball fans? We actually weren’t until we moved up here. This place is CRAZY in love with the local team and it’s all anyone ever talks about.
So we have grown to really enjoy watching the games and seeing the team do well every year. We were already big sports fans and always made game-day a big event. Adding basketball to the mix was just natural for us and a great excuse to continue making all our favorite appetizers year-round.

It’s so much fun. One of the family’s favorite snacks these days is this cheesy corn dip that I make in my favorite little crockpot.

It’s so simple I often let the kids get it going for me if I’m tied up. You literally just toss it all in the crockpot, cover, and let cook for 2 hours.
THAT IS IT! I will stir it about mid way through but that’s all that needs to be done before transferring to your serving bowl. That’s why I love it so much, it’s nearly effortless.
We made sure to have plenty of snacks going on! I like to make sure I have the fridge stocked with water and the table full of all our favorite foods. Often times there is more than one game on at the same time.
So my big tip for game day- if you have more than one TV in your house – have at least 2 games on at once. That way people can go back and forth and feel like they can see them both.
This keeps everyone happy. I also like to use picture-in-picture. But some guests feel that it blocks the screen too much. So the second TV is another option.
Here are some commonly asked questions
Can I use canned corn?
You bet. Canned corn works great. Just be sure to drain it before adding it to the pot.
Can I use different types of cheese?
I have not personally tried it, but I would imagine that it would be just as delicious. Just keep in mind that some types of cheese will produce a lot more grease when they are melted down. You want to avoid that as it will cause all of the ingredients to separate instead of having a creamy texture.

Can this recipe be doubled?
You can, and we do it often. You will want to use a standard-size slow cooker instead of the smaller version I used for this recipe. If you are feeding a large crowd, you’ll want to double this because people LOVE it.
HOW DO YOU MAKE Cheesy Corn Dip?
- Combine corn, cream cheese, cheddar cheese, mozzarella cheese, salsa verde, and olives in a small 3-quart slow cooker.
- Over & cook on high 2 hours or on low 4 hours- stirring about every 45 min- 1 hour.
- Transfer to serving dish & serve with your favorite chips or crackers for dipping.
What is the best way to store leftover corn dip?
Transfer any unused corn dip to an airtight container and keep refrigerated for up to 4 days. To reheat, just pop the lid and microwave until hot, stirring every 30-60 seconds.
