I mean, honestly, I miss the days when I could just plan out our meals and dinner made it on the table at the same time every night. But these days it can be nearly 8 pm before we get home and can start working on some sort of dinner.
So I love to keep it as fast as possible but still relatively healthy. I don’t want to skimp on the good stuff for the sake of time. So we do a lot of one-pan meals like this one. I can literally make it in less than 20 minutes.

The time saving is awesome, because of course, we have to budget in time for dishes too. Which is why it is so nice to keep this prep to one pan. Bonus- if you use paper plates you only have to wash the prep tools, the pan, and the forks.

Can I use different vegetables?
Sure, you could toss in a couple of cans of corn or green beans to make this more to your liking. We often change it up based on what we have on hand.
Does it really take less than 20 minutes?
Yes, in fact, if I can get my prep done in 5 minutes, then this actually can be ready in about 15 minutes. How many dinner recipes can you think of are done in such little time? This one has super tasty ingredients too. No more sandwiches for dinner.
HOW DO YOU MAKE Cheesy Broccoli Sausage Skillet Dinner?
- Heat the oil in a large skillet over medium-high heat.
- Brown sausage rounds, stirring periodically, approx 5 minutes.
- Add rice, stirring into the sausage to brown.
- Add chicken broth or water & seasonings. Stir.
- Reduce heat to low & cover for 5 minutes.
- Remove lid & stir in frozen broccoli & pimentos.
- Cook for 2-3 minutes, or until broccoli is heated through.
- Stir in shredded cheddar cheese.

What is the best way to store leftover sausage and rice dinner?
Place any leftovers in an airtight container and refrigerate for up to 3 days. To reheat, place in a microwave-safe dish with a little bit of water. Cover and microwave in 30-second increments until heated, stirring between each time.
Can this recipe be doubled?
You would have to have a pretty parge skillet. I use a very large skillet and this recipe fills it.
What skillet do you use to make this recipe?

Can I use regular rice instead of instant rice?
If you wish to use regular rice instead of instant rice, please cook for 15 minutes instead of 5 minutes.

Cheesy Broccoli Sausage Skillet Dinner
Ingredients
- 2 links smoked sausage sliced into rounds
- 2 tsp oil vegetable or canola
- 2 cups instant rice
- 2 cups chicken broth or water
- 2 tbsp dried minced onions
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp salt
- ½ tsp pepper
- 8 ounces frozen broccoli florets
- 1 jar pimentos 2 ounces - drained
- 2 cups shredded cheddar cheese
Instructions
- Heat the oil in a large skillet over medium-high heat.
- Brown sausage rounds in the skillet with the oil, stirring periodically for approx 5 minutes.
- Add the rice, stirring into the sausage to brown.
- Add chicken broth or water & seasonings. Stir.
- Reduce heat to low & cover for 5 minutes.
- Remove lid & stir in the frozen broccoli & drained jar of roasted pimentos.
- Cook for 2-3 minutes, or until broccoli is heated through and softened.
- Stir in the shredded cheddar cheese before serving.

What if I want to use real rice?

Instant rice IS “real rice”. The difference is that instant rice has undergone additional processing after it goes through the same processing as standard white rice. Afterwards, it is fully cooked & then dehydrated before packaging. But I’m assuming you mean standard white rice. This would require additional moisture added to the skillet & about 25 extra minutes on the cooking time to fully cook the rice. You could cook white rice in a rice cooker & then just stir the remaining skillet ingredients into it once cooked, but this would defeat the idea of both a 30-minute or less dinner AND a one-pan dinner.

The rice I used was instant rice. I should’ve use white rice. The rice was too soggy by time frozen broccoli was heated. Or use thawed broccoli.

I had no broccoli so i improvised I used thinly sliced carrots and celery also added chickpeas and it really came out better than I thought….used sesame oil to fry the kielbasa also I love cooking Mexican so I used knors’s beef bouillon instead of chicken broth. For certain I will make it again.
