These are especially great for the kids and their busy schedules. It ensures they have something warm and delicious for breakfast – even if they are hurried to get out the door. Not to mention – these are great for camping too.
Everything you love about breakfast is right there in the wrap or tortilla. That delicious breakfast sausage mixed with the hashbrowns and cheese and eggs – what more could you want?

Making these burritos vegetarian is simple. Just leave out the sausage and replace it with cooked eggplant or other veggies you like to enjoy. Possibly squash or zucchini.

- Cook the hash browns until golden brown, remove from the pan onto paper towel-lined plate.

Tips for making the best homemade breakfast burritos

- Try using a tortilla warmer to help the tortillas stay perfectly soft.
- If you don’t have a tortilla warmer – try placing them on a plate – sandwiched between 2 damp paper towels. Then microwave for several seconds at a time.
- Don’t over-stuff the tortilla. This will only cause them to break – which defeats the whole purpose of making breakfast portable.
Are these morning wraps healthy?
That depends on how you look at it. The fillers can include meat and veggies along with eggs and cheese which means they are full of protein and iron. They can also contain calcium, vitamin A, vitamin C, and other nutrients that keep them healthy in addition to making them flavorful.

These originated where I grew up in Southern California, which is why they are a staple for me. There they’re served in restaurants and by street vendors throughout the state.

The breakfast wraps are also popular in New Mexico where the fillers can include green chiles, pork and are often seasoned with chili powder. SO GOOD!
