Can I add protein powder to baked oatmeal?
Yes – you can add a scoop of your favorite protein powder to the mixture before folding in the fruit. You might need to add a little bit more milk to keep it from getting too dry.
Can I use frozen fruit?
Yes, absolutely, that will work just fine. Just be sure to thaw the fruit & pat it dry before using. If you add the fruit when it is frozen it will bake out too much liquid and the end result will be a soggy mess.

Can this recipe be doubled?
You can, and we do it often. I usually mix the doubled ingredients in one large bowl but then separate the mixture into 2 -9×9 pans and then bake them side-by-side. This way I don’t have to alter the baking time by trying to bake it all in one larger pan.
Variations
- Try this with other varities of fresh or dried fruit such as strawberries, raspberries or chopped apples.
- Add fruit syrup on top when serving.
- Mix in some peanut or other nut butter.
- Try adding some chocolate chips.
- Top with fresh peaches or bananas.
Can I use steel cut oats or quick cook oats?
For this recipe, no – those will not work. There are other recipes out there that call for these types of oats. But because those perform so differently in how they soak up the moisture in the recipe – this needs to be made with old-fashioned rolled oats.

How to make baked oatmeal
- Preheat the oven to 350 degrees F.
- Spray a 9×9 inch square baking dish with cooking spray, set aside.
- In a large bowl, whisk together the oats, brown sugar, cinnamon, nutmeg, baking powder and salt.
- In a medium bowl, whisk together the milk, melted butter, eggs and vanilla extract.
- Pour the wet mixture into the dry mixture and stir to combine.
- Stir in the blueberries.
- Spread evenly into the prepared pan.
- Top with chopped nuts, if desired.
- Bake for 35-40 minutes or until center looks almost set.
- Serve immediately with yogurt, fresh berries, syrup or honey if desired.
- Store leftovers in the refrigerator.

Why did my baked oats turn out soggy?
Baked oats should be soft – but they should not be soggy. If yours is not quite firm enough it could be due to variations in ovens, climate, or elevation. I recommend baking until the center looks almost set instead of going by the designated time.
Can I use a non-dairy milk?
Yes – non-dairy milk will work just fine for this recipe. Try almond, oat, coconut, or rice milk.
