What is the best way to store Air Fryer Taquitos?

Once cooked, Air Fryer Taquitos can be stored in an airtight container in the fridge for up to 3 days. Reheat them in the air fryer before serving.

How long do Air Fryer Taquitos take to cook?

These usually take about 6-8 minutes to cook. However, this will vary depending on the size and thickness of your tortillas. Be sure to keep an eye on them so they don’t overcook. You certainly don’t want them to burn.

How Air Frying Works

While air fryers are relatively new to the market, the technology isn’t really a new concept. They basically work like tiny convection ovens that you can use on your countertop.

Similar to a convection oven, it circulates the hot air within the cooking area using a high-powered fan. This helps evenly distribute the heat around the food which not only creates more evenly cooked food but also reduced cooking times.

By circulating the hot air, which contains the fine oil droplets from adding a light mist layer before cooking, and allows you to remove the need for submerging our foods in heavy oils to create the deliciously crunchy foods we all love.

Can I make Air Fryer Taquitos ahead of time?

Yes, you can make Air Fryer Taquitos ahead of time. Simply prepare the taquitos as directed and store them in the fridge until you’re ready to cook them. When you’re ready to eat, just cook them in the air fryer as directed.

What are the benefits of air frying?

Healthier

It’s no secret that fried foods are more fattening – but did you know that there are 9 calories in every gram of fat? With air frying, we can reduce the fat by removing most of the oils usually needed to create crunchy foods. This helps to drastically reduce fat intake and calories.

Convenience

I love being able to cook with my air fryer and eliminate the need for large baking sheets and lots of pots and pans. Most of my air fryer recipes can be made with just a mixing bowl or two or a small saucepan in addition to my air fryer.

Energy Efficient

Someone said to me once, “why make this in the air fryer if you can do it the conventional way in the same amount of time?” Well, air frying helps eliminate the need for a conventional oven.

Not only can you keep your home cooler in the summer by not using the oven, but you are saving money with reduced energy consumption costs as well.

Time Saver

I don’t know about you, but if I can avoid turning on the oven and having to wait 20 minutes for it to preheat, I’m happy about that. Most air fryer recipes either don’t require that you preheat the fryer – or the preheat time is 5 minutes or less. That is a huge time saver over using the oven.

Take it on the go

I love that the air fryer is compact and easy to take along on trips. We pack ours in our RV and find that air fryer cooking while camping is so much easier than trying to deep fry foods on a small RV stove or camping burner.

How to Make Air Fryer Taquitos

Prepare the jalapeño. Remove the seeds and endocarp (the white membrane that seeds are attached to). This removes the heat of the pepper as well as the bitterness.
Once cleaned, dice the jalapeño into small pieces. Make sure to wash your hands and fingernails thoroughly after handling peppers.
Add the cream cheese, shredded cheese, chicken, bacon, peppers, and garlic to a mixing bowl, and using a stand mixer or hand mixer, stir until well combined.
Layer the tortillas between damp paper towels and then microwave the tortillas until soft and pliable. About 30-60 seconds.
Working quickly so the tortillas stay soft, fill each tortilla with 1½ tablespoons of filling. Roll the tortilla up and place it in an oil-sprayed air fryer basket. Fill the basket leaving some room between taquitos.
Spray taquitos with oil and cook at 350 for 8 minutes or until taquitos are crispy.
Serve with cilantro, fresh jalapeños, and lime. Ranch makes a perfect dipping sauce.

What kind of tortillas should I use for Air Fryer Taquitos?

Technically you can use either flour or corn tortillas for Air Fryer Taquitos. We prefer corn tortillas because they tend to be more crispy, but both types will work well. If you are using flour tortillas then you are actually making flautas, not taquitos.

What is the difference between taquitos and flautas?

Taquitos and flautas are both Mexican dishes that consist of rolled-up tortillas filled with meat, cheese, and/or vegetables.

The main difference between the two is that taquitos are typically made with smaller corn tortillas, while flautas are made with larger flour ones.

Both dishes can be fried or baked, and they are typically served with dipping sauces such as salsa, guacamole, or sour cream.

What is the best chicken for this recipe?

When making this recipe you will need already cooked chicken, which makes this a great recipe for using up leftovers or for using rotisserie chicken. However, we like to use this creamy fiesta chicken because it is so tasty!

How to prevent sticking in the air fryer

Sticking can often happen when using an air fryer. I understand that most would think to add non-stick spray to the basket to prevent this. I strongly encourage you to not do that.

Non-stick spray leaves a coating that won’t come off, even when washed. Over time – this will build up and cause smoking when you use our air fryer.

I also do not recommend putting down a sheet of foil. The idea behind air frying is to allow the air to circulate around the food.

This is why the basket or tray has holes in it. If you put foil down – this prevents the air from reaching all of the areas it needs to in order for it to cook properly.

Instead – I recommend spraying the basket with olive oil using this spray bottle. You can line the air fryer with perforated parchment paper.

Or you can use one of these really great silicone liners that still allow for airflow but are reusable and easily cleanable.

Can I use frozen meat?

You can use leftover meat that has been refrigerated, but I don’t recommend trying to stuff these with frozen meat. The cooking time will be way too long.

What should I serve with Air Fryer Taquitos?

Air Frying Doneness Tip

Every air fryer is a bit different and they all cook at different rates – so in general, all cooking times are approximate based on the pan and temperature.

You can always cook the recipe longer if needed and reduce the heat a bit. If needed, you can tent the top if it is browning too much.

Can these taquitos be frozen?

I have not tried freezing them once they have been baked. I would recommend eating them fresh or refrigerating the remaining amount and use within 2-3 days.

Can I use raw meat?

Unfortunately, no. You will need to start with meat that has already been cooked. These won’t turn out well if you try to cook the meat once it is already rolled in the tortillas.

What air fryer do you use?

We actually have 3 air fryers. I have a smaller one from Phillips that we started with. I have since given that to my son since he’s only cooking for 1.

But the more I used the air fryer I realized I really wanted a digital screen. It wasn’t any more expensive, in fact- our XL air fryer from GoWISE was less expensive than the Phillips and I love its ease & extra functions.

Plus it comes with a lot of the extra accessories I like to use when cooking with my fryer.

But I when I started working on my second air fryer book, I wanted to change things up. I picked up this LARGE air fryer that has been wonderful. It has Touch Screen Presets plus it is XL Family Size, which is great!

However- if you are on a low-carb diet, the apples probably contain too much natural sugar to stay within the daily limits even when removing the sugar in this recipe.

Yes, you can definitely make cider in advance! Just cook it according to the recipe instructions and then store it in an airtight container in the fridge for up to a week. Reheat individual servings as needed.

What is “natural pressure release”?

Often, an Instant Pot recipe would call for you to release all the pressure at the end of the timed pressure cycle. However, the cooking process stops when the pressure is released.

For recipes that call for a natural pressure release, you would refrain from releasing the pressure from the unit for a set amount of time. This allows for a little extra cooking time as the pressure inside naturally goes down.

At the end of the natural pressure release cycle, you would then use the valve to release the remaining pressure and stop the cooking process.

What is the difference between a pressure cooker and an instant pot?

By today’s definition, they are virtually the same – if you are talking about an electric pressure cooker. However, a traditional pressure cooker and an instant pot are two different cooking methods.

A traditional pressure cooker is a sealed metal container that cooks food quickly by steam under increased atmospheric pressure and heats the pot to boiling point.

An Instant Pot, on the other hand, is an electric-style pressure cooker that uses the same idea for cooking foods but can do so with very little liquid. They are incredibly efficient, safer than a traditional pressure cooker, and super easy to use too. Plus they come with a multitude of other functions making them great for quick meal prep.

What to serve with apple cider

There are so many delicious things that go great with apple cider! Try serving it with warm cinnamon rolls, gingerbread cookies, or a slice of pie.

It’s also delicious paired with savory foods like roasted meats or sharp cheeses or cheese logs. really, the sky’s the limit! Just get creative and have fun experimenting.

What kind of apples should I use for apple cider?

Well- we didn’t pick the types of trees that were planted on our property. That was decided by the first owners and we are the lucky recipients. So I have no idea what types we have here. I’m just using what I have and it’s working just fine.

However – since I’m sure most of you will be buying your apples at the store – here are some suggestions.

When you are making apple cider, there are different kinds of apples that work best. Some apples have a higher water content, so they will add to the overall volume of the cider as well as the ratios with the other ingredients. Some are quite sweet, which can also change the overall outcome of the cider.

When picking an apple to make into apple cider, you want to focus on ones that are a bit more tart in flavor. This will result in a nice balance of tart and sweet for the perfect cider flavor. The best type of apple for this is usually the Red Delicious variety, though Golden Delicious will work as well.

How to Make Instant Pot Apple Cider

Combine the water, apples, brown sugar, cinnamon sticks, vanilla extract, ground cinnamon, whole cloves, and allspice in the Instant Pot Insert.
Close the lid, set to sealing, and cook on manual high pressure for 25 minutes.
Quick release. Remove the lid once the pin drops.
Use a potato masher to mash the apples a bit to help release more flavor.
Set the Instant Pot to the saute setting and simmer for 15 minutes.
Set a fine mesh strainer lined with a cheesecloth over a large bowl or pot.
Very carefully ladle the contents of the Instant Pot into the strainer, catching all of the solids.
Once all of the liquid has passed through into the pot below, give the cheesecloth a good squeeze to get out any remaining liquid. Be sure to wait until it is cool enough to touch so you don’t burn yourself.
Discard the solids in the cheesecloth.
Ladle the warm cider into mugs and serve with a fresh apple slice or wedge, cranberries, and a fresh cinnamon stick.

2 large apples = 1 pound
3-4 medium apples = 1 pound

3 cups cored, sliced or chopped apples = 1 pound

1 pound dried apples = 8 cups cooked apples

I am currently using an 8-quart pot, but this recipe can be made in the 6-quart pot too. If you have one of the smaller versions (3-quart mini), I recommend cutting this recipe in half.

Do you have any other tips for making the perfect S’more?

Here are a few tips for making the perfect S’more:

Use fresh marshmallows for the best flavor.
Roast the marshmallow over the campfire until it is golden brown.
Allow the chocolate to soften slightly before sandwiching it between the graham crackers.
Use a sharp knife to cut the S’more in half so that the chocolate does not squish out.
Serve the S’more immediately after it is assembled.

Change up the ingredients

To change up this classic combo, try replacing the chocolate square with a large peanut butter cup or your favorite candy bar. You can also add strawberries in between the chocolate square and marshmallow.

You can really shake it up and replace the graham crackers with chocolate chip cookies or glazed donuts.

How to Make Air Fryer S’mores

How to prevent sticking in the air fryer

Sticking can often happen when using an air fryer. I understand that most would think to add non-stick spray to the basket to prevent this. I strongly encourage you to not do that.

Non-stick spray leaves a coating that won’t come off, even when washed. Over time – this will build up and cause smoking when you use our air fryer.

I also do not recommend putting down a sheet of foil. The idea behind air frying is to allow the air to circulate around the food.

This is why the basket or tray has holes in it. If you put foil down – this prevents the air from reaching all of the areas it needs to in order for it to cook properly.

Instead – I recommend spraying the basket with olive oil using this spray bottle. You can line the air fryer with perforated parchment paper.

Or you can use one of these really great silicone liners that still allow for airflow but are reusable and easily cleanable.

Air Frying Doneness Tip

Every air fryer is a bit different and they all cook at different rates – so in general, all cooking times are approximate based on the pan and temperature.

You can always cook the recipe longer if needed and reduce the heat a bit. If needed, you can tent the top if it is browning too much.

Ingredient Tip

If the marshmallow has a hard time staying on top of the chocolate, try cutting it in half and placing the sticky side down. This will keep it in place and more evenly distribute the marshmallow over the whole s’more.

When looking for milk chocolate squares, I usually just pick up a solid milk chocolate candy bar & break it to the size I need.

How to store leftover s’mores

While s’mores are always best when served immediately after making them. If you have leftover s’mores, you can store them in an airtight container at room temperature for up to 3 days.

Can these be made in the oven?

You bet – if you don’t happen to have an air fryer do not fret. You can make these in the oven as well. To do so…

Bake in a preheated 350-degree oven for 9-11 minutes. You can also broil the marshmallows for a couple of minutes to make them toasty if desired.

What to serve with s’mores

S’mores are typically served as a dessert or snack. However, they can also be served as part of a larger meal. For example, you could serve them with hot dogs and burgers at a cookout, or you could make s’mores pizza for a fun twist on the classic dish.

When we moved to our property I was so excited to have our own little mini orchard. But once fall came around I was knee-deep in apples and absolutely swimming in apple butter.

Because of the inability to get more freezers for storing our food I had to utilize a good portion of that apple butter quickly. That’s where this bread comes in.

Because each loaf calls for 1 cup of apple butter, I was able to use a bunch of the apple butter I was making and then take multiple loaves to our new neighbors on the surrounding properties.

I have to say – this bread is so delicious though – I almost didn’t want to share.

What is the best way to store leftover apple butter bread?

I find this bread is best when kept in an airtight container and kept at room temperature. It should keep for up to 3 days on the counter or a week when chilled. If you decide to chill it – just give it a quick zap in the microwave to take the chill off of it a bit before serving again.

Can I use a different type of milk?

Yes – that will work for this recipe. You can use nut milk, oat milk, or even heavy cream if you like.

What type of apple butter do you recommend?

I used my homemade apple butter recipe because I had so much of it. But you can use some from the store if you don’t have some homemade stuff already ready to go.

Can I make Apple Butter Bread ahead of time?

Yes! This bread is actually best if made ahead of time and allowed to sit overnight. The flavors will have a chance to meld and the bread will be even more moist and delicious.

Can this apple butter bread be frozen?

Yes, I do it often. I find that it stays nice and moist if you wrap it tightly in plastic wrap and then place it in a zip-top bag before freezing. Please use within 3 months.

How many can this serve?

This will depend on how large or small you cut your pieces. However, you should be able to get 12 or more slices out of each loaf.

How to Make Apple Butter Bread

Preheat the oven to 350 degrees.
Grease 2 standard loaf pans with bakers release or shortening. Set aside.
Combine the flour, cinnamon, baking soda, baking powder, and salt in a large bowl. Whisk to combine. Set aside.
In another bowl, combine the sugar with the eggs, and oil. Mix well.
Then stir in the apple butter and milk, whisking until well combined.
Gently stir in the dry ingredients mixture, making sure to not over-mix. Stir until just combined.
Divide the batter between the prepared loaf pans.
Bake for 50-60 minutes or until the toothpick test comes out clean. You can also test by gently pressing the top of the loaf – if it springs back, they are done.
Remove and cool completely IN THE PAN on a wire rack.
Store wrapped in plastic wrap and then in a zip-top bag – AT ROOM TEMPERATURE. No need to refrigerate unless your house is very warm or you don’t plan on using it all within 2-3 days.

Can this recipe be doubled?

Yes- doubling works great. Just divide the large quantity of batter between 4 loaf pans and make sure to rotate them in the oven about halfway through the baking process.

When we first started our low-carb journey it seemed like there wasn’t anything we loved that we were allowed to have. But then slowly as we went, day by day we learned new things about how to reduce the sugar and carbs in our diet.

I have not personally tried it, but I don’t see why not. You just want to add something to give the outside a bit of texture. You can also use panko if you prefer.

If you aren’t trying to keep the carbs down – these will still taste delicious when using breadcrumbs or panko.

How to Make Air Fryer Fried Pickles – Low-Carb Version

Preheat the air fryer to 400 degrees.
Add the pork rinds to a large zip-top bag and use a rolling pin to crush them or another object with some weight.
Pour the crumbs into a small bowl and mix with the paprika, garlic powder, and ground black pepper.
Using a paper towel, pat dry the excess moisture off of the pickle slices and add them to a large bowl.
Add the coconut flour and toss to evenly coat the pickles.
Whisk the egg in a separate small bowl.
Using tongs, dredge the pickle slices in the egg wash in batches.
Allow the excess egg wash to drip off and then press them into the pork rind mixture.
Transfer to a plate and repeat until all of the pickles have been coated.
Depending on the size of your air fryer, you may need to work in small batches. First, spritz the cooking trays or basket with cooking oil – very lightly.
Arrange the pickles in a single layer. Air fry for 10-12 minutes.
Serve immediately with your favorite dipping sauce, ranch is a great option!
Sprinkle some dried parsley on your dipping sauce as garnish (optional).

2 cups dill pickle slices
1 cup ground pork rinds – pork rind crumbs
1 large egg
½ tsp garlic powder
¼ tsp ground black pepper
½ tsp paprika
1 ½ tbsp coconut flour
cooking oil in a spray bottle
Optional: Ranch for dipping or your favorite sauce and dried parsley for garnish.

Instructions

Preheat the air fryer to 400 degrees.
Add the pork rinds to a large ziploc bag and use a rolling pin to crush them or another object with some weight.
Pour the crumbs into a small bowl and mix with the paprika, garlic powder, and ground black pepper.
Using a paper towel, pat dry the excess moisture off of the pickle slices and add them to a large bowl.
Add the coconut flour and toss to evenly coat the pickles.
Whisk the egg in a separate small bowl.
Using tongs, dredge the pickle slices in the egg wash in batches.
Allow the excess egg wash to drip off and then press them into the pork rind mixture.
Transfer to a plate and repeat until all of the pickles have been coated.
Depending on the size of your air fryer, you may need to work in small batches. First, spritz the cooking trays or basket with cooking oil – very lightly.
Arrange the pickles in a single layer. Air fry for 10-12 minutes.
Serve immediately with your favorite dipping sauce, ranch is a great option!
Sprinkle some dried parsley on your dipping sauce as garnish (optional).

Notes

If using an air fryer with a basket you may need to flip the pickles halfway through.

When it comes to birthdays, you don’t always have to do a cake to celebrate. My mom would always have the option of cookies at the party table so people could have a little nibble of something sweet without having to commit to a slice of cake.

These birthday cookies are so much fun. Loaded with sprinkles, easy to make with cake mix (meaning they are super soft and chewy for days), and then topped with a simple buttercream that will have everyone coming back for more.

Here are some commonly asked questions

What is the best way to store leftover kiss cookies?

Because these cookies are frosted, I recommend keeping them in an airtight container in the refrigerator. You will also need to keep them in a single layer because of the frosting.

The easiest way to do this is to place them in casserole dishes – preferably ones with an airtight lid. If they don’t have lids that make them stackable for space saving – you can use the press & seal wrap instead. Not only does it do a good job at keeping things airtight – but it stays firm enough for light stacking.

What is Funfetti or Confetti Cake Mix?

Basically, Funfetti is a soft, fluffy, vanilla cake with rainbow sprinkles baked throughout. It’s FUN and probably my most favorite flavor of cake.

This is actually the same as confetti cake. But then Pillsbury came out with an actual Funfetti variety of their box mix – which made the name popular.

For this recipe, you can use the Pillsbury brand and get the actual Funfetti cake mix or you can pick up the rival brands who call their versions confetti or rainbow chip.

Ingredients for Birthday Cookies

large eggs – room temperature
oil vegetable or canola
sprinkles plus more for garnish
birthday cake chocolate kisses

Frosting, optional

unsalted butter – softened
confectioner’s sugar
heavy whipping cream or milk
clear vanilla extract

Why do the ingredients need to be at room temperature?

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

How to Make Birthday Cookies

Preheat the oven to 350 degrees F.
Line 2 large baking sheets with parchment paper or a silicone mat. Set aside.
In a large bowl, mix together the cake mix, eggs, and oil until completely combined.
Stir in the sprinkles until mixed throughout.
Scoop with cookie dough scoop or tablespoon onto the prepared baking sheets.
Bake for 8-10 minutes or until slightly firm but still soft.
Remove from the oven and place the baking sheet on a wire rack.
If adding chocolate kisses without frosting, add them immediately while the cookies are warm.
Or cool the cookies completely, then add the frosting, sprinkles, and chocolate kisses.
Store in an airtight container.

Frosting

In a mixing bowl, cream the butter until fluffy and smooth.
Sift the confectioner’s sugar into a medium bowl – this step is optional, although it makes the frosting smooth and easier to mix.
Gradually add the confectioner’s sugar, alternating with heavy cream or milk.
Add the vanilla extract and beat well.
Add to a piping bag with a large star tip and pipe onto cooled cookies before adding the chocolate kiss.

Can you freeze kiss cookies?

The short answer is yes. These cookies can be frozen after baking, once they have completely cooled. The best way to do that is to wrap each cookie individually with plastic wrap.

Then place them in an airtight container or zip-top bag. You can freeze for up to 3 months. Keep in mind that the sprinkles may sweat from the moisture in the freezer – so you might want to stick to only freezing the ones without sprinkles.

You can also freeze the dough. Just roll it into balls and place it on a baking sheet. Freeze in a single layer. Once frozen, transfer to an airtight container for space-saving.

When ready to bake, thaw the dough, roll the cookies in the sugar or sprinkles and then bake as directed. Please don’t add the sugar or sprinkles prior to freezing – neither holds up too well with the moisture in the freezer.

Do I need to chill the dough?

Typically cake mix cookies don’t require chilling. However, if your room is quite warm, you might want to place the bowl in the fridge for about 30-60 minutes prior to rolling.

This will help keep the cookies thick and from spreading too much when baking.

How many can this serve?

This recipe makes about 35 cookies, so it will depend on how many people eat at a time. It will also vary a bit on how large or small you make the cookies.

Can this recipe be doubled?

Yes, doubling this recipe works great and I highly recommend doing it if you are giving these as a gift or making them for a party. These are a favorite and they do go quickly.

What are the best sprinkles for these cookies?

This is important – just because the package says “sprinkles” doesn’t necessarily mean that it is in fact sprinkles.

I see a lot of people using colored sanding sugar that is labeled as sprinkles.

This will not work as well because when that sugar gets wet – like when mixed into a moist dough or when placed in the refrigerator, it will sweat & the color will bleed out.

Make sure you are using jimmies – they don’t bleed or alter the colors. “Sprinkles” called Nonpareils are also not great for this recipe because they also bleed.

What can I make with rainbow sprinkles?

We absolutely LOVE using rainbow sprinkles in our recipes. The fun, bright colors bring happiness – so why not add them whenever it makes sense. Here are some of our favorite recipes to use with rainbow sprinkles.

Can this be made with a different yogurt?

Yes, this recipe will work with coconut yogurt. However, the texture and rise will be a bit different for the end result.

Can this be made with alternative milk?

This naan recipe will work when using nut milk. But it will subsequently change the overall texture of the naan. It may not be as stretchy and chewy.

How to Make Garlic Butter Naan

Dough

First add the warm water, sugar, and yeast to a large bowl. Stir and mix. Allow the yeast to proof for about five minutes.
After the five minutes, add in your flour, yogurt, milk, oil, garlic, baking powder, and salt. Mix until fully incorporated.
Next, knead with a dough hook for about five minutes on medium speed if using a stand mixer. If using your hands, transfer the dough ball to a lightly floured flat surface and knead for about 10 minutes.
Then transfer the dough ball to a lightly oiled bowl. Cover with a clean towel and place in a warm spot for 2 hours, or until doubled in size.

Cooking

Once the dough has doubled in size, transfer the dough ball to a lightly floured surface.
Divide the dough into 10 even portions.
Take each portion and roll it into a ball. Set aside and once you have rolled all of the dough, cover with a clean kitchen towel. Allow them to rest for 15 minutes.
Lightly dust a clean, flat surface with some flour. Roll the prepared dough into an oval shape.
Prepare a cast iron skillet (a non-stick skillet will be fine as well.) by heating over medium-low heat.
Cook on one side in the pre-heated skillet until you see bubbles appear on the surface. Flip and continue to cook for about one minute on the other side.
Remove and place on a plate and repeat steps 4-5 with the remaining dough.
In a microwave-safe bowl, melt the butter.
Once melted, add in the garlic and parsley. Mix well.

While the possibilities are endless when it comes to what you can serve with naan. Here are some ideas –

Chicken Tikka Masala, Lamb Rogan Josh, Beef Curry, Vegetable Korma, Dal Makhani, Butter Chicken, Chickpea Curry, Coconut Curry, Eggplant Curry.

That being said, I also really love to enjoy this with Beef & Mushroom Kabobs, Grilled Chicken Skewers & Grilled Asparagus.

Can this recipe be frozen?

Yes – this recipe can be frozen. Place it in an airtight, freezer-safe container. Freeze for up to 2 months. It can be thawed fairly quickly by placing it in the refrigerator for several hours.

When you are ready to serve again – microwave until warm.

NOTE – it is best to freeze and store prior to adding the butter. This recipe will reheat better if you add the butter once ready to serve.

Can I use honey instead of sugar?

Yes, I have seen some other recipes out there that call for honey in place of the sugar to help proof the yeast. I have not personally tried it. But in general, honey is a good substitute for sugar in this instance.

I like to place mine in an airtight container and keep them at room temperature for up to 5 days. You can also use a zip-top bag but I find they get jostled a bit too much with this and then you have broken cookies.

Can the dough be frozen for later?

Yes – this dough can be frozen and baked later. If you would like to roll the dough prior to freezing, make sure to freeze the dough balls in a single flat layer. Once frozen they can be transferred to a zip-top bag for space-saving.

To bake – increase the baking time by 1 minute – no need to thaw the dough before baking.

I like to roll the dough between my hands to soften the outside of the dough before baking – then roll in the sugar – this helps the cookies have the freshest texture once they are baked.

How long do double chocolate chip cookies last?

These double chocolate chip cookies should be enjoyed within 5 days to 7 after making them. They can be frozen for up to two months if you need to do that too.

Are these really no-chill?

Yep – that is why I love this recipe. You don’t have to chill this dough at all. However – if your house is hot (maybe it’s summer and you don’t have AC) or maybe the dough is too warm and the cookies are spreading too much when baking – you can chill the dough for 30 minutes before baking to help it out.

Why do my cookies go flat?

Cookies typically go flat when the dough isn’t at the right temperature at the time of baking OR when they are missing the right ingredients that help them to rise- such as eggs, baking soda, and baking powder. Please make sure you are measuring those ingredients correctly and that they are at room temperature when you start the mixing.

Also – something to keep in mind- make sure you are placing the dough on a cool baking sheet. The cookies will bake differently if you are placing the dough on the hot baking sheet you just removed from the oven. Make sure you have a rotation of baking sheets so you can always place the unbaked dough on a cool tray.

Should I use light or dark brown sugar?

Since I make my own brown sugar, I use light brown sugar for almost all of my recipes. But light or dark brown sugar will work in this recipe.

Is there a substitute for butter in double chocolate chip cookies?

You can use margarine or vegetable shortening as a butter substitute in these double chocolate chip cookies. Keep in mind that the rise, spread, and overall texture of the cookies will be altered when making this change.

How to Make Double Chocolate Chip Cookies

Preheat the oven to 350 degrees.
Line a couple of baking sheets with parchment and set them aside.
In a large, microwave-safe bowl, melt the butter on 50% power until mostly melted – remove and whisk until the remainder of the butter melts.
Whisk in the granulated sugar and brown sugar until well combined.
Stir in the egg and vanilla just until incorporated.
Add the flour, cocoa powder, baking soda, and salt. Mix until just combined. The dough will be just a bit sticky.
Fold in the chocolate chips.
Scoop the dough into 1.5 tbsp portions onto the prepared baking sheets – making sure to space the dough about 2 inches apart to allow for spread.
Bake for 7-10 minutes or until the cookies are just set. They will be a bit puffy but will continue to set as they cool.

Can this recipe be made without a stand mixer?

I think you could possibly get away with using a hand mixer if you have firm beaters.

I don’t recommend using a whisk or even the whisk attachment on a stand mixer for this dough as a whisk isn’t strong enough for this dough.

How do I properly measure the flour?

The official way is to spoon the flour into the measuring cup & level off. This makes sure the flour isn’t packed tightly into your measuring cup, adding more than you need, as that will make your recipe too dry.

What is the difference between Dutch-process cocoa powder and regular cocoa powder?

So Dutch-processed cocoa powder is also referred to as alkalized cocoa. This powder starts with cocoa beans that have been washed in an alkaline solution of potassium carbonate, also used in the production of soap and glass.

By doing this, it neutralizes the acidity of the beans, making the beans neutral. This is important because when they are neutral, they do not react with baking soda. Instead, it is often paired with baking powder.

So – long story short – using regular cocoa powder vs Dutch-process cocoa powder will yield a completely different rise and texture to any recipe you are making.

So I highly recommend paying close attention to the type of cocoa powder called for in each recipe and sticking to it for that reason.

Like many out there, when we started our Keto journey we found that nearly EVERYTHING has sugar added to it. It became very apparent to us that we would have to make our own alternatives if we wanted to eat “normally”.

One thing we wanted to make was chicken parmesan – keto-style. But we couldn’t just use the sauce from the store without packing on the carbs. That’s where this sauce comes in.

We ditched the breading and just added this sauce to the top of a grilled chicken breast along with some cheese to keep it low carb.

With only 2 carbs for a 1/4 cup serving, we used only 1-2 tbsp per chicken breast, making the carbs for the sauce negligible. That’s a win for me and we didn’t have to feel like we were dieting either.

Why make your own Keto Marinara Sauce?

When trying to stick to a Keto, sugar-free, or low-carb diet there are a lot of things to keep in mind. What I noticed when trying to buy products to replace our sugar-filled versions is that there are what seems like a billion different names for sugar and sugar substitutes.

When reading labels you need to know all the secret little ways that sugar can be added to what you are buying. Generally, you want to avoid ingredients that will spike your blood sugar – which is why it can be so much easier to just make your own so you know exactly what is being added.

How to store this sugar-free marinara sauce

This sauce is best kept refrigerated until you plan on using it. I like to put it in a jar with a tight lid and keep it in the fridge for up to 5 days.

If you aren’t going to use it all right away – you can portion out some of it and freeze it in a freezer-safe container or zip-top bag for up to a couple of months. Thaw it by placing the container in a bowl of warm water for about an hour. Then reheat as needed on the stovetop.

Combine the olive oil, granulated garlic, and minced onions in a saucepan and heat over medium for about 2 minutes – stirring frequently.
Reduce the heat to a simmer and then add the diced tomatoes, vinegar, salt, dried oregano, and dried basil.
Bring to a simmer, stirring occasionally.
Simmer for about 30 minutes (20 minutes on a high-output stove) until the volume has reduced and the sauce has thickened.
Use the sauce immediately or store it in a jar with a tight lid in the refrigerator for up to 5 days. You can also freeze in a freezer-safe container for up to 6 months.

What are the benefits of using a sugar-free or low-carb marinara sauce?

There are a few benefits to using a sugar-free or low-carb marinara sauce. One benefit is that it can help keep your blood sugar levels stable. Another benefit is that it can help you stay in ketosis.

Can this be made in the Instant Pot?

Yes, you can make this in the Instant Pot. Just saute in the pot as you would with this recipe on the stovetop. Then add the other ingredients and cook on manual high pressure for 10 minutes. Quick release the pressure when done and use as needed.

What are the best tomatoes to use in Marinara sauce?

The brand doesn’t really matter as long as it doesn’t have any added sugar. The can should only contain crushed tomatoes and possibly a little oil or salt. Tomatoes naturally have their own sugar and that is all you need – nothing else added or it defeats the point of making your own sauce.

IS MARINARA AND TOMATO SAUCE OK ON A KETO DIET?

As with everything on a keto diet – moderation is key here. As I mentioned before, tomatoes naturally contain sugar – so you don’t want to drown your food in the sauce, drink the sauce, or generally overdo your portions.

But if you are on keto – then you are probably used to moderating the food choices you make anyway.

How Many Carbs are in Homemade Marinara Sauce?

As I mentioned above, this recipe contains 2 net carbs for a 1/4 cup serving. So if you are only having 1-2 tablespoons at a time, that is only half to 1 carb since there are 4 tablespoons in a 1/4 cup.

Yes, you can make this with other berries, we love making this with blackberries from our garden each summer. However, keep in mind the volume of the fruit you are substituting with so that it still has the same ratio with the top crust layer.

This recipe makes about 8 servings, depending on your portion sizes. It is enough for our family of 5, leaving some for the kids the next evening.

Can I use another flavor of cake mix?

Yes, absolutely, that will work just fine. I have used white, yellow, and even chocolate when I didn’t have a box of vanilla.

How to Make Slow Cooker Blueberry Cobbler

Prepare the slow cooker with nonstick cooking spray or cooking oil.
Pour the blueberries into the bottom of the slow cooker.
Top the blueberries evenly with the cake mix.
Cut the butter into 1 tablespoon-sized squares and distribute them evenly over the top of the cake mix. Do not mix!
Put the lid on the slow cooker.
Cook on low for 3 to 4 hours or on high for 2 hours.
Serve alone or topped with ice cream or whipped cream.

Can this be made with canned fruit?

I have not tried it with canned berries, like a pie filling. But I have made a baked version like this one with canned peaches (drained) and that turned out fantastic.

Notes for the best Slow Cooker Cobbler

The final result for the cobbler will be the baked and bubbling berries on the bottom and the crusty cake mix layer on top. If you were to mix it up prior to baking, it would end up baking more like a cake, rather than a cobbler. It won’t be like a pie – because we aren’t adding a crust on the bottom – just berries and the topping.

There are many different ways to enjoy cobbler. It can be served as a dessert, main dish, or side dish. Serve it warm or cold, plain or with a scoop of ice cream or dollop of whipped cream.

15.25 ounces vanilla cake mix
½ cup butter 1 stick

Instructions

How to store these Cinnamon Rolls

Once you’ve made the cinnamon rolls, you’ll want to make sure you store them properly so they stay fresh and delicious. Here are a few tips:

– Keep them in an airtight container at room temperature for up to 3 days.

– If you want to keep them longer, you can store them in the fridge for up to 1 week.

– You can also freeze them for up to 3 months. Just make sure to wrap them tightly in a freezer-safe container before putting them in the freezer.

How to make Cinnamon Rolls in the Air Fryer

Yes – you can make these in the air fryer if you don’t want to run your oven! YAY!

To do so – you will want to make HALF of this recipe and use a small air-fryer-safe pan that fits in your air fryer. I would recommend using the regular-size cinnamon rolls instead of the Grands.

When adding the heavy cream for the small batch – you will only need a half cup. Then just “bake” in your air fryer for 12-15 minutes at 320°F OR until golden on top and cooked through.

Keep checking them towards the end as all air fryers tend to cook a bit differently and you don’t want burnt cinnamon rolls.

Can I use regular cinnamon rolls?

We tried the trend with the Grands – as shown in the viral recipe. But I have seen others that made them with the regular size rolls. The result was similar but smaller. Just as you would expect from using smaller rolls.

If you decide to use the smaller ones, you will need to bake them for a bit less time. Start checking them after 17-20 minutes. They should be about done within that time.

How to open a cinnamon roll can

These cans are super simple to open. Just remove the paper wrapper. A lot of times the rolls are under so much pressure that the tube will just pop open on its own once the paper has been removed.

However, if that isn’t the case – you can either give it a tap on the edge of the counter OR take the end of a blunt object like a wooden spoon or the handle of a butter knife and use it to add a little pressure to the tube.

This is usually all it needs to pop the tube open and you can then arrange the rolls in your casserole dish.

How to Make TikTok Cinnamon Rolls

Preheat the oven to 350 degrees.
Prepare a 9×13 baking dish with nonstick cooking spray or oil.
Remove the cinnamon rolls from the package and arrange them in the prepared baking dish.
Pour the heavy cream around and over the top of the cinnamon rolls.
Bake for 25 to 30 minutes or until the tops are lightly golden.
Frost with the packaged icing.

What about the pecan glaze?

The pecan glaze is completely optional. For this round we tried it without but then made them again with the glaze.

When you add the glaze it makes them more like a sticky bun vs a cinnamon roll. Both are insanely delicious and I wouldn’t turn either of them down. It just depends on what you are craving at the time.

How to Make the Pecan Glaze

To make the pecan glaze – just combine 1 cup of brown sugar with a 1/2 cup of butter and 1/2 cup of chopped pecans in a skillet. Heat over medium-low until the butter has melted and the sugar has dissolved.

You should have a caramel-like syrup with pecans mixed in. Pour that mixture over the top of the rolls before baking but after you have added the heavy cream. Bake as directed.

How much alcohol should I use?

The amount of alcohol you use will depend on how strong you want your shots to be. A good rule of thumb is to start with 1/2 cup of whatever alcohol you choose and adjust from there.

We are using a full cup of combined alcohol for this recipe – but be sure to not increase beyond that as the jello won’t set if the ratios are off.

Can I make jello shots without alcohol?

Yes! If you want to make non-alcoholic jello shots, simply substitute the alcohol for water or juice.

How to Make Sangria Jello Shots

Combine the boiling water and jello in a medium mixing bowl and stir until dissolved.
Add the wine and brandy. Stir again.
Fill each shot cup about ¾ of the way full, using the injector or measuring cup. Do not fill to the top.
Place in the fridge to chill for about 3 hours or until set.
If using, slice the apples and oranges into small pieces.
Top the shots with a dollop of whipped cream and some of the fruit. This is optional.

Can I freeze jello?

Freezing jello is not recommended. The changes in the molecular structure during the freezing process make the jello lose its texture and it won’t harden. Frozen jello becomes melted and runny when thawed.

Can I make these ahead of time?

Yes, Jell-O shots can be prepared up to 24 hours ahead of time. Prepare the shots as directed and store them in the refrigerator until ready to serve.

Tips for making the BEST Jell-O Shots

I use an injector because it makes less of a mess and is quicker. However, using a pourable measuring cup works also.
Do not leave these uncovered in the fridge if you plan on storing them. They will dry out if you do. It will take them a couple of days to dry out, so it’s ok if you don’t remember, but if you plan on storing them for a few days, be sure to cover them.
These will keep in the fridge, covered, for about a week and a half. Do not freeze.
Do not garnish if you’re storing for a couple of days. You can garnish the shots up to 2 hours before serving. They do best if being garnished right before serving though.
Be careful going over the stated amount of alcohol. If you do, they may not be fully set up. If you like a little thinner consistency for your jello shots, you can add more alcohol.
You can add the pieces of fruit to the jello itself before placing it in the fridge. This is another fun way to serve them.

They may be found at many retail stores, including Walmart and the dollar store. We live in a very rural area, so I get mine from Amazon online. At the bottom of this post is a link to some that I like.

1 cup salted butter melted
1 cup granulated sugar
4 eggs
15 ounces cream-style corn
4 ounces diced green chiles
1 cup Mexican blend cheese
1 cup all-purpose flour
1 cup yellow corn flour
4 teaspoons baking powder

Instructions

Preheat the oven to 350 degrees.
Prepare a 9×13 baking dish with cooking spray or oil.
In a bowl, whisk together the melted butter and sugar until well blended.
Add the eggs, corn, and green chiles.

What is ranchero sauce?

Ranchero sauce is a traditional Mexican sauce made with tomatoes, onions, and chili peppers.

How to Make Huevos Rancheros

Sauce

In a medium saucepan, bring the two tomatoes to a boil with the serrano peppers and add water until you cover the tomatoes. Let them cook for 5 – 10 minutes, or until you notice the skin of the tomatoes tearing.
Once they are ready, peel the tomatoes and add them to the blender along with the serrano pepper.
Add ¼ cup of the water used to boil the tomatoes, onion, garlic clove, salt, and pepper. Blend until smooth.

Tortillas

Heat a tablespoon of oil in a large nonstick skillet over medium heat.
Once it’s hot, add a tortilla and lightly fry it on both sides. This will take around 2 minutes.
Once it’s ready, set it on a plate and repeat with the other tortilla.
Warm the refried beans and spread some of the beans onto the tortillas.

Eggs

Continue with the fried eggs. Add the other tablespoon of oil into the skillet, and fry one egg at a time. Let it cook between 2 and 4 minutes depending on how much you want it cooked. Ideally, have a runny yolk or over easy.
Once it’s ready, place it over the tortilla, on top of the beans. Repeat with the other egg.
Place them on the plates you are serving and spoon some of the sauce over your eggs. Sprinkle with fresh cilantro and Cotija cheese if you decide to use some.

What can I serve with Huevos Rancheros?

They’re soft and chewy, with chocolate chips, mini Oreos, and mini chocolate chip cookies in every bite. What more could you want? You just can’t go wrong with adding cookies into cookies!

Here are some commonly asked questions

Can this recipe be doubled?

You can, and we do it often. The dough will work just fine when doubled. Keep in mind that the dough fills a 5-qt mixer bowl pretty full – so unless you are using a larger 7-8-qt mixer bowl, doubling might be difficult.

Do I need to chill the dough before baking?

YES – you absolutely must chill this dough before baking for at least 30 minutes. This is key to the cookies baking correctly.

Do I really need to chill the dough?

Yes, Yes, Yes! Chilling the dough is important for a couple of reasons. First – while the dough is chilling the ingredients are coming together. It gives a better overall flavor to the cookie.

The second and probably even more important than the first – is that chilling helps the dough hold together during the baking process.

Without chilling, the dough would not only be too sticky to really roll it into balls. But it would also spread way too much while baking – leaving flat and not very appealing cookies in the end. Please don’t skip the chilling process.

What do you mean by soft butter?

You will need to take your butter out of the fridge about an hour before you would like to make the recipe for the butter to soften but not get too soft.

Ingredients for Cookie Monster Cookies

unsalted butter – softened
brown sugar
granulated sugar
egg
vanilla extract
blue food coloring
all-purpose flour
salt
baking powder
white chocolate chips
mini Oreo cookies
mini chocolate chip cookies

How to soften the butter to room temperature?

First

There are a couple of ways to do this. The first being that you can take the butter (& any other ingredients that need to be at room temperature) out, leave it on the counter for about 30 minutes while you prep for baking.

I usually start with all my chilled ingredients and pull everything I need out onto the counter before getting started – so I know for sure I have everything before I’m mid-way through I realize I’m out of something.

But sometimes it’s winter and that isn’t enough time to get the ingredients warmed up – OR – I’m just not that organized to plan ahead. It happens. So I have another couple of tricks.

Second

I place the butter in the microwave – wrapped in the paper. (don’t do this if it is wrapped in foil) Then I microwave for 2 seconds – flip – go another 2 seconds – flip again – and continue for 2 seconds on each side.

This is usually enough to get it perfect – sometimes stopping before if it feels soft enough. Take care when doing this method – overly softened butter from the microwave WILL ALTER the end result of the recipe. Don’t over-do it.

Third

My third method is to place the wrapped butter sticks in a zip-top bag and place it in a bowl of warm water. I do this with the eggs too. If the water isn’t too hot it can be THE PERFECT way to get “room-temperature” ingredients.

How to Make Cookie Monster Cookies

In a large bowl of an electric mixer, cream together the butter, brown sugar, and granulated sugar until fluffy.
Beat in the egg, vanilla, and 3 drops of the blue food coloring. Add more food coloring until you reach your desired shade. Keep in mind that the color will intensify as the dough sits.
Slowly mix in the flour, baking powder, and salt.
Stir until just combined.
Next fold in ⅓ cup of the white chocolate chips, ⅓ cup of the mini Oreo cookies, and ⅓ cup of the mini chocolate chip cookies. Use the mixer or a spoon to break up the cookies just a bit while stirring them in.
Divide the dough into 6 equal portions and form each portion into a ball.
Place on a lightly greased cookie sheet.
Break up the remaining mini Oreo cookies and mini chocolate chip cookies.
Place the remaining white chocolate chips, mini Oreo cookies, and mini chocolate chip cookies around the top of the unbaked cookie dough.
Refrigerate for at least 30 minutes.
Meanwhile, preheat the oven to 350 degrees.
Bake the cookies for 15-18 minutes. You want the edges to just be golden brown, we want the cookies to stay chewy – so don’t over-bake.
Cool for 5 minutes on the baking sheet and then transfer to a rack to cool completely.

Why do the ingredients need to be at room temperature?

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

Can you freeze Cookie Monster Cookies?

Yes – the baked cookies will keep when frozen for up to 3 months. Wrap each cookie individually with plastic wrap and then place them all in an airtight container before freezing.

These cute cookies can be stored in an airtight container at room temperature for up to 1 week. If you want them to last longer, you can freeze the dough or the baked cookies for up to 3 months. Can I add other ingredients to the cookie dough?

Sure! These adorable cookies are a great base for experimentation. You can change the color and the mix-ins to whatever you like. Keep in mind that by changing them from blue to another color and changing the cookies that are added to something else – they will no longer be “cookie monster cookies” but you can come up with some really cute variations.

Should I use light or dark brown sugar?

Since I make my own brown sugar, I use light brown sugar for almost all of my recipes. But light or dark brown will work in this recipe.

Why do I need to pack my brown sugar when measuring?

Packing your brown sugar is crucial for making consistent measurements. If you do not pack your brown sugar, you are leaving little air pockets in your measuring cup that will reduce the true amount of brown sugar you are adding to the recipe.

These pockets are never uniform, meaning that scooping without packing will add a different quantity each time. Thus, one should always pack their brown sugar when measuring – even if the recipe does not call for it.

Can I grill frozen peaches?

Yes! Just be sure to thaw them completely before grilling. Frozen peaches will also take longer to grill, so be patient.

I would imagine that because most frozen peaches come pre-sliced, you would have to place them in a container or on a griddle over the grill. They would essentially become smoked peaches since they wouldn’t be touching the grill grates.

How to Make Grilled Peaches

Preheat the grill to medium heat.
Cut the peaches in half and remove the pit.
Brush the peaches on the cut side with the oil.
Brush the grill with the oil as well.
Place the peaches on the grill -cut side down- and cook for 8-10 minutes.
While the peaches are cooking, melt the butter in a microwave-safe bowl.
Stir in the sugar and cinnamon.
Remove the peaches from the grill and place them on a baking sheet with a rim.
Spoon the butter mixture over the peaches slowly so it soaks in.
Serve immediately with a scoop of ice cream and a drizzle of caramel sauce, if desired.
Store the leftovers in the refrigerator for up to 3 days.

Can I make grilled peach pie?

Absolutely! Just follow your favorite recipe and substitute grilled peaches for the fresh or canned peaches called for in the recipe. Yum!

I have not tried baking a pie on the grill yet. But stay tuned, it is on my wish list.

Does it matter what type of peach is used?

Nope – you can make this recipe with either yellow or white peaches. They are both equally delicious. Just make sure they are ripe but still firm enough that they don’t squish when you cut them and remove the pit.

Can these peaches be grilled on the stovetop?

Yes – if you would like to grill these peaches on the stovetop instead of the bbq that is possible. I found that using a cast-iron skillet works best for this – preferably one that has grooves in the bottom like this grill pan here.

How to Cut a Peach

First – Wash thoroughly by rinsing under water and rubbing gently with your hands.

Then – if you want to peel the skin before cutting – if the peach isn’t fully ripe, use a peeler to remove the skin. Otherwise, score the skin on top and blanch them in boiling water for 15 seconds. After that, immerse them in an ice bath to halt the cooking process. This method allows you to remove the peaches’ skins without cooking them.

To cut into slices – Place the peach on a cutting board with its stem side up. Cut angled pieces from the peach using a paring knife, starting from the stem end. To remove the flesh, cut away any tissue around the pit if necessary. This results in between 10 and 12 slices.

Leaving the peel on – Start with the peach at the top of the stem, where there is a natural indent. Cut down into the flesh until you hit the pit with a sharp paring knife. Continue cutting around to the other side until it reaches where you started.

Twist each half, then hold. If it comes apart with little effort, the peach is a freestone. It’s most likely a clingstone peach if you need to remove the pit from the flesh by cutting.

Choose one of the sides, then use the blade’s tip to make small incisions along the pit’s curve, separating the flesh. The remaining portion will still have the pit in the middle since you removed half of it with tiny sawing motions.

Watermelon is the flavor of summer in my opinion. So when it comes to making something to help us cool down after a long day working on the property – a watermelon margarita is definitely a “go-to” recipe.

This one is so simple to make. I like to make the mix in the morning and pop it in the fridge until we are ready for a cool down. But you can make this one about an hour before serving too for the best flavor.

I’m just here working my way through all of mom’s cake recipes. While a whole lot of them are several layers and super elaborate – she has some in her collection that are simple and easy – like this lemon cake.

I love this one because it falls into the snack cake category being that it is only one layer, is on the smaller side of 8″ square, and whips up fairly quickly.

It is perfect for bunco night, a small backyard bbq or brunch at church. I know you’ll love this one as much as we do.

Can this be made with different size cake pans?

You bet – if you need to change the size of the cake you are making – please see the variations below. As with all cakes – bake until the toothpick test is clean as different ovens, climate, elevation, and other factors can change the baking time.

8″ square (used here) is the same as a 9″ round with both holding 8 cups of batter.
9×5″ loaf pan also holds 8 cups of batter – however, the depth of the cake would increase and change the baking time.
9 x 13 pan holds 14 to 16 cups of batter – you would need to double this recipe for a 9×13 pan.
This recipe can be made in 2 – 6″ round pans – with each pan holding a total of 4 cups – baking for 18-21 minutes.
You can convert this to cupcakes – it will make about 8-12 standard-size cupcakes.

Keep the depth of the batter the same.

The amount of batter in a cake pan is crucial to the recipe. The cake could sink in the middle or overflow if there is too much batter. If you don’t use enough batter, you’ll end up with a thin, flimsy, and dry cake (the moisture will evaporate too rapidly). When switching pan size, follow this guideline: fill halfway to two-thirds full. If you have any leftovers – make them into cupcakes.

Ingredients for Lemon Cake

Lemon Cake

Notes

You may use vanilla extract instead of almond extract. I like the flavor of almond extract in certain baked goods, but it’s a personal preference. Almond extract enhances the lemon flavor in this recipe.
1 tablespoon of lemon zest is equal to about 1 lemon.
2 tablespoons of lemon juice is about half of a large-sized lemon.
You can use all-purpose flour in this recipe instead of cake flour. You will use 2 ¼ cups of all-purpose flour instead of 2 ½ cups as the recipe states above.
The scoop and level method is the process you will use to accurately measure your cake flour. All you need to do is take a spoon and scoop the flour into a dry measuring cup, and then using the back of a knife scrape the top to level it.

How do I properly measure the flour?

What is cake flour?

Cake flour is very finely milled making it lighter in texture, it is bleached so it has a lighter color, and has a much lower protein content than your standard all-purpose. All of these things will change the overall texture, rise and consistency of the cake since it will produce less gluten.

How to Make Lemon Cake

Preheat the oven to 350 degrees F. Spray an 8×8 inch pan with nonstick baking spray. Set aside.
In a medium-sized bowl, whisk together the cake flour, baking powder, salt, and lemon zest. Set aside.
In a bowl of an electric stand mixer fitted with a paddle attachment, cream together the butter and sugar until light and fluffy, about 3 minutes.
Add in the eggs one at a time, followed by the almond extract, sour cream, and lemon juice. Mix until combined.
Carefully, add the flour mixture into the wet mixture. Mix until just combined.
Pour batter into the prepared 8×8 pan.
Bake for 22 to 25 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove the cake from the oven and let cool for 20 to 30 minutes before removing it to a cooling rack.

How to Make Lemon Cake Icing

Add the confectioner’s sugar, lemon juice, and heavy whipping cream to a medium-sized bowl. Whisk until smooth. If you would like a thicker icing keep adding more confectioner’s sugar. If the icing is too thick, add more lemon juice or heavy whipping cream to thin it out.
Spread the icing on top of the lemon cake and sprinkle with your favorite colorful sprinkles.
Serve immediately.

Why do the ingredients need to be at room temperature?

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

What do you mean by soft butter?

You will need to take your butter out of the fridge about an hour before you would like to make the recipe for the butter to soften but not get too soft.

In a bowl of an electric stand mixer fitted with a paddle attachment, cream together the butter and sugar until light and fluffy, about 3 minutes.
Add in the eggs one at a time, followed by the almond extract, sour cream, and lemon juice. Mix until combined.
Carefully, add the flour mixture into the wet mixture. Mix until just combined.
Pour batter into the prepared 8×8 pan.
Bake for 22 to 25 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove the cake from the oven and let cool for 20 to 30 minutes before removing it to a cooling rack.

Icing

Add the confectioner’s sugar, lemon juice, and heavy whipping cream to a medium-sized bowl. Whisk until smooth. If you would like a thicker icing keep adding more confectioner’s sugar. If the icing is too thick, add more lemon juice or heavy whipping cream to thin it out.
Spread the icing on top of the lemon cake and sprinkle with your favorite colorful sprinkles.
Serve immediately.

Notes

You may use vanilla extract instead of almond extract. I like the flavor of almond extract in certain baked goods, but it’s a personal preference. Almond extract enhances the lemon flavor in this recipe.
1 tablespoon of lemon zest is equal to about 1 lemon.
2 tablespoons of lemon juice is about half of a large-sized lemon.
You can use all-purpose flour in this recipe instead of cake flour. You will use 2 ¼ cups of all-purpose flour instead of 2 ½ cups as the recipe states above.
The scoop and level method is the process you will use to accurately measure your cake flour. All you need to do is take a spoon and scoop the flour into a dry measuring cup, and then using the back of a knife scrape the top to level it.
