How to Make Air-Fried Cheeseburger Egg Rolls

Add the ground beef to a medium-sized skillet set over medium-high heat. Cook, stirring often until the meat is browned– about 5 minutes.
Drain the grease and then add the garlic powder, paprika, and salt to the beef.
Stir to combine and then set the browned beef aside until it is cool enough to handle (you don’t want it to melt the cheese)– about 10 minutes.
Add the cooled beef to a large bowl along with the cheese, green onion, and pickles. Stir to combine.
Add about ¼ cup of filling to the center of one egg roll wrapper.
Beat the egg in a small bowl with a splash of water to create an egg wash. Brush the egg wash around the edges of the egg roll wrapper to create a seal.

Roll and Cook

Roll the wrapper into an egg roll (the same way you could roll a burrito) by folding the bottom point over the filling, then folding the left and right points into the center, and finally by rolling it upward to seal.
Lightly grease your air fryer basket with olive oil spray and add as many egg rolls as will fit. Make sure to place them seam-side down so they don’t explode!
Brush the tops of the egg rolls with the egg wash and sprinkle with sesame seeds or flakey sea salt, if desired.
Cook at 400F for 5 minutes. Then flip the egg rolls over and cook for an additional 5 minutes.
Serve warm, with your choice of dipping sauce.

Tips and Tricks

I used 80/20 ground beef– but you could also use ground chicken or ground turkey if you prefer.
Garlic powder, paprika, and salt help season the meat so it really tastes like a grilled cheeseburger! Feel free to swap 1 tablespoon of your favorite burger seasoning if you prefer.
Cheddar cheese is my classic go-to cheese for burgers so that’s what I’m using here. Feel free to use any cheese you like.
Green onions add a subtle, onion flavor. If you prefer sweet or red onions, feel free to use those instead!
Dill pickles add a bit of acidity and saltiness to help balance out the fat of the egg rolls. Feel free to leave them out or substitute sweet or spicy pickles.
Egg roll wrappers are a thin, wonton-like sheet of dough that you can find near the tofu in most grocery stores! You could also use wonton wrappers for mini egg rolls.
The egg helps seal the egg rolls and creates a crisp golden brown exterior.
You can use relish in place of the chopped pickles.

Small

We actually have 3 air fryers. I have a smaller one from Phillips that we started with. I have since given that to my son since he’s only cooking for 1.

Medium

But the more I used the air fryer I realized I really wanted a digital screen. It wasn’t any more expensive, in fact- our XL air fryer from GoWISE was less expensive than the Phillips and I love its ease & extra functions.

Plus it comes with a lot of the extra accessories I like to use when cooking with my fryer.

Large

But I when I started working on my second air fryer book, I wanted to change things up. I picked up this LARGE air fryer that has been wonderful. It has Touch Screen Presets plus it is XL Family Size, which is great!

I have found that if you have a sliced avocado, you can wet it with water and then place the plastic wrap directly on top of it and store it in the refrigerator. This has worked quite well for us.

I have not tried it with guacamole because the texture isn’t smooth. The idea is that the water creates a layer that keeps air from getting to the avocado – which is what turns it brown. I would imagine if you tried to add a layer of water to the top of a bowl of guacamole, it would dilute and ruin it.

You could try just spraying the top of it with a mist of water and then placing the plastic wrap directly on top. If you give this a try – please let me know how it worked.

My dough didn’t rise, what happened?

Most of the time this means your water was either too hot or too cold. If it is too hot it will kill the yeast, too cold & it just won’t rise. I find that using a thermometer helps & bringing the water to 115-125 degrees is best.

What is the best yeast?

You can use rapid rise, premium, or whatever you have on hand. I buy my yeast in the bulk section of my store, so it’s not brand-name or anything fancy & it works just great.

Add the yeast and stir until dissolved.

Cover the bowl and allow it to rise at room temperature for 45 minutes.
Prepare a baking dish with nonstick cooking spray or lightly grease it with cooking oil.
Punch the dough down and transfer it to a lightly floured, smooth surface.
Fold the dough into a rectangle and cut it into 12 equal portions.

Expert Tips and Tricks

Please don’t reduce the sugar. The yeast needs the sugar to help it grow – that’s what makes the dough rise.
Make sure you are properly measuring the flour. Don’t scoop packed flour from the bag. This will result in dense, overly dry rolls. Spoon and level the flour and then add more (a little at a time) if needed. You can always add more, you can’t take it away once it is added.
Try using salted butter for more added flavor.

Make sure you let the dough rise in a warm place. Because we live in north Idaho, I will often set the bowl near the woodstove, or wrap it with an electric blanket to keep the dough nice and warm. I have seen warming mats for making bread rolls on places like Amazon. I have found that the electric blanket works quite well and is a fraction of the cost.
These can be made ahead and baked the next day.
It is not necessary to line the baking pan with parchment paper prior to baking.

For the Best Results

Try to make the dough balls uniform in size so that they are equal pieces and all bake evenly.
I have not tried this with bread flour, so please let me know if you give that a try.
This can be made in a large bowl – no stand mixer is required.

I like to use Instant Yeast to make the dough extra springy.
The warm water can be replaced with warm milk but please make sure it is still at optimal temperature. Anything above 125 degrees will kill the yeast and the dough will not rise. Please don’t use hot water. I recommend an instant-read thermometer for accuracy.

How can I prevent the cake from getting stuck inside the pan?

You should make sure that you grease your pan really well with a flour and grease/cooking-spray mixture to keep the cake from sticking. The ridges in the pan are most susceptible to this and they are the most delicate parts of the cake.

Make sure that you really work your grease into these crevices for the best results. I recommend using Baker’s Release.

What is bakers release?

Bakers release is a combination of oil, flour, and shortening that makes releasing cakes and other baked goods almost effortless.

To make Bakers Release – it is as simple as 1,1 & 1.

equal parts of all-purpose flour, shortening, and cooking oil – I like to do 1 cup of each.

Mix the ingredients together – whisking well. Store in an airtight container in the pantry or refrigerator. When ready to use, dip a pastry brush into the mixture and spread it over the cake pan.

3 cups all-purpose flour
2 tsp baking powder
½ tsp kosher salt
½ tsp ground nutmeg
1 cup unsalted butter softened
2 ½ cups granulated sugar
6 large eggs

½ cup pumpkin spice bourbon

Pumpkin Spice Bourbon Glaze

¼ cup unsalted butter
½ cup light brown sugar packed
3 tbsp pumpkin spiced bourbon
1 cup confectioner’s sugar
1 tsp pure vanilla extract
1 cup chopped pecans

Instructions

Cake

Preheat the oven to 350 degrees and spray a 9in bundt pan with cooking spray.
In a medium bowl, whisk together the flour, baking powder, salt, and nutmeg.
Using a large bowl, beat together the butter, and sugar until light and fluffy.
Beat in the eggs one at a time until combined.
Mix in the sour cream and bourbon.
Gradually beat in the dry ingredients until combined.
Pour the batter into the bundt pan and bake for 60-70 minutes or until a toothpick comes out clean.
Allow it to cool for 20 minutes before removing it from the pan and placing the cake onto a wire rack to cool completely.

Glaze

Using a medium saucepan, melt the butter over low heat.
Whisk in the brown sugar and bourbon until combined and bring to a simmer. Cook for 1 minute.
Whisk in the confectioner’s sugar, and vanilla until smooth.
Pour the glaze over the bundt cake and sprinkle with the chopped pecans.

When the holidays come around we love to get in the kitchen and bake. Often times we stick to our classic cookie favorites and then add in a handful of new recipes.

Most of the time we find really good, classic recipes that have been forgotten about in the bottom of grandma’s old recipe tin. These Mexican Wedding Cookies are one of those that we are so happy to have found.

While this recipe is a spin off of our super easy snowball cookies – with the end result being quite similar, this recipe is as classic as it gets.

How to Make Mexican Wedding Cookies

In a small mixing bowl, combine the flour, and finely chopped pecans. Set aside.
In a medium mixing bowl, cream the butter and the 1/3 cup confectioner’s sugar with an electric hand or stand mixer. Beat for 2 minutes; Add vanilla and mix well.
Stir in by hand, the flour and nut mixture. Mix just until combined. Cover with plastic wrap and chill for 20 minutes in the refrigerator.
Pre-heat the oven to 350 degrees F. Prepare the baking sheet with parchment paper.
Using a cookie scoop, roll each scoop into a ball shape and place them on the prepared baking sheet. Bake for 10 minutes, or until lightly browned on the bottom. Do not over bake.
When cookies are cool enough to handle, around 2 minutes out of the oven, gently roll them in the confectioner’s sugar and place them on a cooling rack to cool. After the cookies have cooled, roll the cookies a second time in the confectioner’s sugar.

Making the cookies ahead of time

Yes, you can make these cookies ahead of time. I recommend that you make the dough up until the chilling point. Then keep the rolled dough in the fridge until you are ready to make them.

Then bake and roll in the sugar. I do not recommend refrigerating the baked and sugar-coated cookies. The sugar does not do well in the cool and damp climate of the refrigerator.

What is the difference between Mexican wedding cookies and polvorones?

Polvorones are a type of Mexican wedding cookie that is made with flour, sugar, butter, and nuts. They are usually round or oval in shape and have a sandy texture.

What is the best way to store leftover cookies?

The easiest way is to place in a large airtight container & store at room temperature. I like a large plastic bowl with a lid or a zip-top bag works great too.

You can use unsalted butter in place of salted, if desired; add 1/2 teaspoon salt.
Try using walnuts instead of pecans.
If the dough seems dry and does not hold together in the shape of a round ball in your hand, simply add water to the dough. Start with 1/2 tablespoon till you can roll the ball without it being crumbly.
Doing more or less of the chopped nuts and flour will affect the texture of the cookie.
Store in an airtight container, at room temperature, for up to one week.

Then press firmly into the bottom of the pan. These are great with an Oreo crust and also with a Vanilla Wafer crust.

What to do if you can’t find corn syrup

You can replace the corn syrup with 1/2 cup of sugar dissolved in 2 tbsp of water.

How to Make Pecan Pie Cheesecake Bars

Prepare a 9×13 baking dish with parchment paper. Spritz the paper with nonstick cooking spray.

Crust:

Place the graham crackers and sugar into a food processor. Pulse until the crackers are finely ground.
Add the melted butter and pulse again until the butter is evenly incorporated.
Press the graham cracker mixture into the prepared baking dish. Set aside.

Cheesecake layer:

Beat the cream cheese at medium speed until light and creamy.
Add the sour cream and continue beating until well blended, scraping down the sides as needed.
Add the sugar, eggs, and flour, beating until combined and smooth.
Pour the cheesecake mixture over the crust and spread evenly. Refrigerate for at least 2 hours.

When the weather starts to turn a bit brisk, I am immediately ready for some classic comfort food. This easy chicken pot pie is one of my favorite comfort foods to make once the leaves start to fall.

While there are plenty of pre-packaged versions at the grocery store, there is nothing quite like a homemade chicken pot pie. The juicy chicken and crisp veggies are enveloped in a creamy sauce and wrapped in a savory, flaky crust — it’s like a big, warm hug on a plate.

Some comfort foods can be time-consuming (I’m looking at you, lasagna) but this easy recipe comes together quickly. It has minimal prep time and since you’re only using one pan on the stovetop, cleanup is done in no time.

The next time you’re looking for a simple chicken pot pie recipe with all the classic flavors, try this one. I guarantee your whole family will be asking for seconds (or more!).

Make sure that once the milk is added the filling becomes entirely smooth — you don’t want to have to deal with whisking out lumps after you’ve added the chicken and vegetables.
If you want a shiny crust, try mixing an egg with a bit of milk or water to make an egg wash. Then, use a pastry brush to spread it over the top layer of crust before baking.

How to Make Chicken Pot Pie

Press 1 layer of the crust into the bottom of the prepared pie plate or casserole dish. Trim any excess dough around the edge.
In a large saucepan or skillet, melt the butter over medium heat, ensuring not to overheat it.
Next, gently stir the onions into the melted butter. Be sure not to caramelize the onions — they should be soft and translucent.
Remove the onions and butter from the heat.
Then, gradually add the flour while stirring the onions and butter. The mixture will remain slightly lumpy.
Season the flour mixture with salt and pepper and stir to fully incorporate all ingredients.
Next, slowly add the chicken broth while continuously stirring.
Once the broth is incorporated, add the milk.
Place the pot back on the stove. Bring it to a boil while constantly stirring.
Once the mixture has begun to boil, reduce the heat and allow it to simmer while continuing to stir. The mixture should become thick enough to coat a spoon.
Add the vegetables and the chopped chicken to the pan and stir until all ingredients are coated and well combined.
Gently pour the filling over the top of the crust in the pan.
Cut small slits into the second crust to allow for steam to escape during cooking.
Place the upper crust on top and seal the edges. Using a fork to crimp will help the edges to adhere and to remain sealed while cooking.
Next, use foil to cover just the edges of the crust.
Place the dish in the preheated oven and bake until the top is golden brown and the filling is bubbly.
Remove the dish from the oven and allow it to cool slightly before serving.

Easy Chicken Pot Pie

If you want a simple recipe for classic comfort food, this easy chicken pot pie is for you. Make it any time you want a quick, hearty meal.

Ingredients

2 refrigerated pie crusts thawed according to package directions
¼ cup butter
⅓ cup onion chopped
⅓ cup all-purpose flour
½ teaspoon salt
¼ teaspoon black pepper
1 ¾ cups chicken broth
½ cup milk 2% or whole
1 ½ cups mixed veggies or peas & carrots – cooked
3 cups chicken breast cooked & chopped

Instructions

Preheat oven to 425°F.
Line a 9-inch pie plate with 1 layer of crust, trimming the excess around the edge if necessary. Set aside.
Melt the butter in a large saucepan or skillet over medium heat. Add the onions and cook until soft and translucent (about 1-2 minutes).
Remove from the heat and add the flour, salt, and pepper; stir well.
Add the chicken broth very slowly, stirring constantly until smooth; mix in the milk. Return to the stove and cook over medium heat until it boils; stirring constantly.
Reduce the heat and simmer for 1 minute longer while continuing to stir (mixture should be thick). Remove from the heat.
Mix in the vegetables and chopped chicken until well combined.
Pour the filling into the crust.
Before adding the top crust, cut slits in the dough for ventilation, then add that layer of the crust over the filling. Seal the edges of the crust by crimping with a fork or fold the top edges under the bottom crust and press them together to seal tightly. To prevent the edges of the crust from burning, cover only the edges with a ring of tin foil.
Bake for 30-35 minutes or until the top is golden brown. Remove from the oven and let sit for 5 or 10 minutes to cool. Slice and serve.

Notes

If the edges of your pot pie aren’t browning enough due to the tinfoil, remove the tinfoil for the last 5-10 minutes of baking.
The butter mixture will be lumpy after adding the flour, but it will smooth out after adding the chicken broth and milk.
To save time, use frozen mixed veggies and warm them in the microwave.
Cut slits in the top of the pie crust to let steam escape.

WHY DO MY SHOTS HAVE WHITE LINES BETWEEN THE LAYERS?

You may end up with really light white lines in between each layer due to the whipped cream settling in each layer.

There’s really no way around this unless you skip the whipped cream, but the whipped cream helps define each layer since they give a transparent color otherwise and the orange does taint both the white and yellow layers.

CAN I MAKE JELLO SHOTS IN ADVANCE?

Yes, you can make jello shots several days in advance. Simply prepare the jello according to the recipe instructions, then pour it into your shot glasses and refrigerate until ready to serve.

CAN I USE A DIFFERENT ALCOHOL IN MY JELLO SHOTS?

Yes, you can use any type of alcohol in your jello shots. However, we recommend using vodka, rum, or tequila as they mix well with the jello and provide a smooth flavor. Just don’t increase the measurements as it will keep the jello from setting.

HOW DO I GET THE JELLO SHOTS OUT OF THE SHOT GLASSES?

To remove the jello shots from the shot glasses, simply run a sharp knife around the edge of each glass and then invert it onto a plate. The jello shots should easily come out of the glasses.

WHAT IS THE BEST WAY TO STORE JELLO SHOTS?

Jello shots can be stored in the refrigerator for up to 5 days as long as you have them properly covered. However, we recommend consuming them within 24 hours for the best flavor.

How to Make Candy Corn Jello Shots

White Layer

Add the vodka for the white layer to a medium mixing bowl.
Pour the gelatin packets over the top and give it a light mix to ensure all of the powder gets wet.
Leave the gelatin to sit until bloomed.
Pour the boiling water over the top and mix until fully dissolved.
Add the simple syrup and give it a slight stir.
Add the whipped cream and whisk until fully combined. Do your best to not whisk hard as you don’t want it to become too foamy.
Using an injector or pourable measuring glass, fill each shot cup to about a third full.
Place them in the fridge on an even surface for about an hour or until set.

Orange Layer

When the white layer is almost set, add the orange jello to a medium mixing bowl and add the boiling water.
Stir until dissolved and add the vodka and cold water. Stir.
Add the whipped cream and lightly whisk until combined.
Let the jello sit and cool down a bit more as the white layer finishes setting. About 15 minutes.
Using the injector or pourable measuring cup again, fill the shot glasses another third of the way with the orange jello mixture.
Chill for another hour or until set.

Yellow Layer

Repeat steps 9-14 for the yellow layer.
Once the yellow layer has fully chilled, top it with a dollop of whipped cream and some candy corn, and enjoy!

CAN I MAKE MY SHOTS IN SMALLER SHOT GLASSES?

Yes, you can make your shots in smaller shot glasses if you prefer. Simply adjust the amount you add to each accordingly.

CAN I MAKE JELLO SHOTS WITH FRUIT PUNCH?

Yes, you can make jello shots with fruit punch by substituting the fruit punch for the cold water in the recipe.

Expert Tips

I use a basic Wilton 1M frosting tip and a disposable frosting bag to put a dollop of whipped cream on top of the shots. You can find it or a similar tip at most grocery stores such as Walmart.
Do not garnish the shots if you’re not serving them right away. If you garnish them and then stick them in the fridge, the whipped cream gets stiff and the candy gets sticky and chewy. It’s gross. They’re quick and easy to garnish, so fancy them up right before serving.
If using glass shot glasses, you might provide mini spoons to serve the shots with as you won’t be able to loosen the sides of the shot like you might in a typical plastic shot cup.
These can be made ahead and should last for at least two days, uncovered in the fridge. However, if they’re covered well, they will last about 5 days. Do not freeze.
You can use smaller shot glasses or cups, and you will get more shots out of this mixture. Each color just gets a third of the glass you use. It’s a pretty easy transition.
You can skip the almond extract in the white layer if preferred. It just gives it more of a candy corn flavor to match the theme. You can even add other flavorings in its place such as a fruity flavor to go with the other two layers.
