Are you ready for a cool down my friends? This time of year we love to head out to the backyard, make some good food & add some cocktails in there too. Since we have some birthdays to celebrate this season, we decided we wanted to create something special, yet laid back & casual that would serve as both a cocktail & a dessert. This Blackberry Cream Mimosa fit that perfectly & was a huge hit!
You see, we planted blackberry bushes in the yard early in the spring & now they are overflowing with berries. This is exactly what we were hoping for because everyone here just loves blackberries. So it was only natural that they played a big part in creating this recipe. We also used this fabulous Riondo Prosecco.
Riondo is our go-to beverage for summer because it’s great for sipping after a long day in the office or enjoying with friends on the weekends. It’s great for casual events as well as big celebrations too.

This recipe is really easy to make. Start with a scoop of vanilla ice cream in the bottom of your glass or flute. Then add in sugar coated blackberries & the blackberry syrup.
Top it off with Riondo Prosecco. Let the ice cream melt into the bubbly & sip to enjoy.
So what is prosecco?
Prosecco is a white sparkling wine from Italy. Much like Champagne, the name prosecco refers to a specific region and grape – in this case, glera grapes grown in the north-east Veneto region of Italy. This is an authentic Italian import with an approachable price point and the perfect beverage for summer, either with friends or alone.
How do I enjoy prosecco?
Prosecco’s popularity has increased recently due to its approachable style – it is usually light, fruity, with some sweetness. This vino frizzante boasts fresh aromas of Golden Delicious apple, pear, and acacia blossom.
Its persistent effervescence is followed by a crisp, clean finish. While delicate and fruity on the palate, this prosecco is the perfect choice to either sip by itself or mix to make a bubbly cocktail like this one.

- frozen blackberries
- vanilla bean ice cream
- blackberry flavored syrup for drinks

Blackberry Cream Mimosa
Ingredients
- 1 bottle Riondo Prosecco per party
- 5-6 berries frozen blackberries per glass
- 1/4 cup granulated sugar
- 1 scoop vanilla bean ice cream per glass
- 1 oz blackberry liquor per glass
Instructions
- Roll frozen blackberries in granulated sugar
- Scoop ice cream in the bottom of your glass or flute.
- Add in sugar-coated blackberries & the blackberry syrup.
- Top it off with Riondo Prosecco.
- Let the ice cream melt into the bubbly & sip to enjoy.
