Who loves sugar cookies? What if I told you that you could make a thick & chewy sugar cookie without any rolling required? That’s what you get with these super delicious & easy Birthday Frosted Sugar Cookie Bars.
I absolutely love having frosted sugar cookies for dessert. But I have to admit, there are times when I just don’t feel like making the dough, rolling it out, cutting, chilling, baking & frosting all those individual cookies. That is where these awesome bars come in!

I love these because I can just mix the dough & spread it in the pan to bake. We could call these lazy day sugar cookies, because they are so simple. Then just add the frosting when they are cooled & you are good to go.

WHAT SPRINKLES DO YOU SUGGEST?
I like to use these Rainbow Nonpareils instead of jimmies for this particular recipe. There are plenty of times when jimmies would be more appropriate, like in a Homemade Funfetti Cake or Cake Batter Frosting. But for this, the Rainbow Nonpareils are perfect & appropriately colorful & happy.
CAN YOU FREEZE SUGAR COOKIE BARS
While it is better to freeze the dough & thaw when ready to bake, you CAN freeze baked cookies already decorated with icing or filling with jam or ganache.
If you want to freeze cookies after they are baked, the topping ingredients don’t freeze very well. It would be better if you add any decorations or toppings after you’ve thawed the baked cookies. This is especially true for the Nonpareils, as their color will bleed when moist.
HOW DO YOU MAKE BIRTHDAY FROSTED SUGAR COOKIE BARS
- Preheat oven to 375.
- Line a 9 x 13 pan with parchment & spray lightly with cooking spray – set aside.
- Cream together butter & sugar until light & fluffy.
- Mix in egg, egg white, sour cream & vanilla until well combined.
- Slowly stir in flour, baking powder, & salt to form a crumbly dough.
- Transfer dough to prepared pan & press into an even layer. Using a fork, poke the dough every few inches so it will bake evenly.
- Bake17-20 minutes or until lightly browned around the edges.
- Cool completely before frosting
- Beat together butter, confectioners sugar & milk
- Add vanilla & salt & beat until fluffy.
- Spread over cooled bars, sprinkle with rainbow non-pareil sprinkles & cut into squares.
