Friends, I must confess. I have a serious addition to pulled meat & poultry. No matter how much I have, I can’t seem to ever get enough. I don’t know what it is, but when it comes to meal time around here, pulled chicken, beef or pork is where it’s at for me. I’m completely OBSESSED. So it should come as no surprise that I make this Beer Braised Fiesta Pulled Chicken at least once a week if not multiple times a week.

You see, this Beer Braised Fiesta Pulled Chicken is the perfect addition to so many recipes. We enjoy it right out of the slow cooker in our tacos. But then we have a ton of chicken left over, which is 100% intentional. We like to use it in casseroles, adding in soups & so much more. Sometimes I will have this going in the cooker even when I have other things planned for dinner- because I know I need shredded chicken for a recipe the next night.

I really like this particular recipe because it has a little kick to it. Chicken breasts can get dry & flavorless really easy when cooking in the slow cooker. So we add more seasonings than one would think it needs. Turns out that once it is all cooked & the juices are mixed with the pulled chicken, it’s the perfect amount. It’s so good & crazy easy to make too.

Beer Braised Fiesta Pulled Chicken
Ingredients
- 6-8 boneless skinless chicken breast
- 1 bottle beer of your choosing 12 oz
- 1 cup salsa
- 1 can Rotel diced tomatoes & green chilies
- 2 tbsp chili powder
- 2 tbsp garlic powder
- 2 tbsp granulated garlic
- 2 tbsp dried minced onions
- salt/pepper to taste
Instructions
- Combine all ingredients in the slow cooker & cover
- Cook on low 5-6 hrs or on high 3-4.
- Remove cooked chicken & pull apart with 2 forks in a large bowl
- Return to the slow cooker & stir into the juices
- Cover & let sit on warm for 20 minutes before serving
