Main Ingredients
- Beef chuck roast cut into large cubes. I prefer cubes but thinly sliced roast beef will work amazing as well. Home-cooked or deli roast beef – doesn’t matter, both make my taste buds dance. I use cubes because I roast them first in the slow cooker and then I pull beef – finger-licking good.
- Beef broth or consomme, Onion soup mix, and Red wine vinegar are my favorite ingredients to slow-cook a delicious chuck roast.
- Minced garlic. Can substitute with garlic powder.
- Slider buns, brioche buns, or Hawaiian sweet rolls. If you want a handmade bun, prepare and bake sourdough or dinner buns. I pack usually has exactly 12 or 16 buns.
- Provolone cheese. Roast beef and cheese are a combo made in heaven for sliders. Another easy substitute is Cheddar cheese and Pepper Jack. I use slices. You can buy them or slice cheese yourself. I absolutely vote for regular melted cheese in these sliders, but it is possible to use Cheez Whiz or similar store-bought cheese sauces.
- Fresh arugula as garnish.
- Salt and pepper, to taste

- Slow Cooker to roast the beef to perfection. If you use deli roast beef, you don’t need to use your slow cooker.
- Baking sheet or baking dish with parchment paper.
- Optional, small bowl if you will make any of your favorite sauces.
- Serrated knife to slice the buns or rolls in half.
How To Make Beef Roast Sliders in Slow Cooker
1 – Cook The Beef In Slow Cooker
- Prepare a slow cooker with nonstick cooking spray.
- Place the roast into the bottom of the slow cooker.
- Add the broth, onion soup mix, garlic, and red wine vinegar.
- Cover and cook on low for 6 to 8 hours or until the beef is tender.
- Remove the beef from the pot and shred/pull it using two forks.
2 – Assemble The Roast Beef Cheese Sliders
- Strain the liquid in the cooker to remove the solids.
- Preheat the oven to 350° degrees F (175°C).
- Slice the slider buns in half and place them on a baking sheet lined with parchment paper.
- Add the shredded beef and a slice of provolone cheese on top of the bottom half of the slider buns.
3 – Bake roast beef sliders
- Cover with aluminum foil and bake in the preheated oven for about 5-7 minutes, or until the cheese is melted.
- Remove from the oven, add the top half of the buns, slice into individual portions, and serve warm.
- Add arugula, sauce, and seeds depending on your preference.
Notes on Baking Roast Beef Sliders In The Oven
If you have pre-cooked or leftover meat or sliced meat from a deli counter, you can totally bake roast beef sliders in a baking dish in the oven at 350 F.
Assemble the sliders in the dish, brush with buttery sauce, cover with foil, and bake for 10 minutes. Then remove the foil and bake for another 10 minutes.
Storage
Cooled leftover sliders store well in the fridge for 2-3 days and reheat in a microwave for 20 seconds, or in the oven at 300F covered with foil to keep the top buns from burning.
On the 3rd day, they may be a touch too moist and start to become soggy so better eat them within 2 days.
You can freeze the roast beef sliders for 2-3 months.
Make Ahead
Sliders are great to make ahead: prepare the beef sliders 1 day ahead and wrap them with plastic wrap to store in the fridge until you want to bake and serve them.
Reheat in the oven and serve warm or cold.

- To make it more Reuben style, add pickles, sauerkraut, and 1000 Island dressing.
- Garnish ideas: sesame seeds, Dijon Mustard seeds, Poppy Seeds, and fresh herbs. Seeds add some texture and crunch.
- This recipe can be made gluten-free (with zero gluten buns) and vegan.

Horseradish sauce adds a kick and a nice tangy flavor to the slider.
To make it you need to mix in a small bowl of grated horseradish, apple cider vinegar, sour cream or mayo, chives, and salt. Then you just add the prepared horseradish sauce to the buns.

- Slice all the rolls in half horizontally together in one go leaving the bottom half a bit thicker than the top half. It will let it soak the juices but hold shape.
- Don’t be shy with meat. Load these buns! Melted cheese has a powerful taste and you need to have enough meat to not let the cheese or sauce overpower the roast beef flavor. Sliders are a great option to use leftover roast.
- To skip a slow cooker, you can marinate the meat in advance in the refrigerator for about 4 hours. It will soak all the flavors and you can cook it.
- Don’t add too many toppings to keep the tops of the rolls or buns from getting soggy. There is nothing worse than a mushy soggy slider. For the same reason, if you add any veggies or horseradish sauce inside the slider buns, make sure to pat dry those and drain any excess liquid.
