Who loves a good muffin recipe? In our family we try to make homemade breakfasts as often as possible & muffins, especially mini-muffins, always top the list of favorites. The kids especially love banana muffins & I love them because they are so easy to make. These in particular are made with unrefined coconut oil, making them light & fluffy.
Banana Muffins Recipe
My kids are notorious for purposely ignoring the bananas I buy, but not because they don’t like bananas. It’s more so because they much prefer I bake something with them. Banana bread is their all-time favorite, but these little bites of banana heaven take a close second for sure.
The cool thing is that they are now old enough to make recipes like these muffins for themselves. My kids, the girls especially, love going through my cookbooks & planning out the recipes they want to make for the week. I think it’s great that they want to be so involved in what we enjoy together at the table as a family. I really love that I get to spend less time in the kitchen as a result. Really, enjoying tasty food made with love by my kids. It doesn’t get much better than that.
Breakfast Recipes
Pair these with a piece of fruit & a glass of milk. YUM! What a great way to start the day. When the weather is nice they make great on-the-go snacks too. We can pack them along with our trail mix & head out to enjoy this absolutely beautiful place we call home. I definitely feel that we need to do that more often. Time out in the mountains or at any of the area lakes doesn’t happen as often as it should.
Banana Macadamia Nut Mini Muffins
These make great little snacks for after school too. My son likes to pack them when heading to work. Because they are bite size, it makes it easy for him to eat on the run when he has little time for a break.
I used Crisco® Unrefined Organic Coconut Oil because Crisco is a name I know & trust. I can pick it up at Target during my regular shopping trip & I can use it in so many of my recipes. It’s a great organic substitute for butter margarine & other oils. It doesn’t change the flavor of my recipes but Unrefined Coconut Oil does retain the distinct coconut flavor & odor of coconut. (They also offer a refined version that does not retain the coconut flavor or odor)

Banana Macadamia Nut Mini Muffins
Ingredients
- 1 cup whole wheat flour
- 1/4 cup unrefined coconut oil melted
- 2 eggs
- 2 large ripe bananas- mashed with a fork
- 1 tsp baking soda
- 1/4 cup pure maple syrup or raw honey
- 1/2 cup chopped macadamia nuts
Instructions
- Preheat oven to 350 degrees
- Grease 2 12-hole mini muffins trays with coconut oil. Set aside.
- In a large bowl add all the ingredients in the order listed above- excluding the nuts
- Whisk until smooth.
- Fold in nuts
- Spoon the batter into the muffin trays (I used my mini cookie scoop)
- Bake for 10-15 minutes max or until the toothpick test is clean
- Remove from pans & cool on a wire rack before storing in an airtight container
