So I guess most kids are back to school now. Where I grew up we didn’t go back until the day after Labor Day. It was a West Coast thing to do back to school in September rather than August. But now all that has changed & even my old stomping grounds have been back in class for weeks now. Of course, none of this really applies to me because I homeschool & we set our own schedule. But that doesn’t mean I don’t embrace the back to school season & love all things fall. I definitely always focus on kicking the day off right with a delicious breakfast.

I have been making only homemade breakfast items for the kids for years now. It’s super easy to whip up several batches of muffins or bread to feed them all week long. Recipes like these Banana Apple Muffins have all the fall flavors & the kids just LOVE them.
Banana Apple Muffins
My son especially looks forward to fall flavors because he is nuts for cinnamon. So once I start making goodies like apple butter & caramel & all things loaded with cinnamon, he’s a happy camper. I love making these muffins because they are pretty darn easy to make & the recipe makes so many that I only need to make the one batch & it feeds them all week long.

Banana Apple Muffins
Ingredients
- 1 cup butter- softened
- 1-1/2 cups granulated sugar
- 2 eggs
- 2 mashed bananas
- 4 cups all-purpose flour
- 5 tsp baking powder
- 1 tsp salt
- 3/4 cup Milk
- 1 tsp vanilla extract
- 3 cups chopped apples
- 6 tbsp sugar
- 1 tsp cinnamon
Instructions
- Preheat oven to 400 degrees & prepare your muffin tins. Set aside.
- Cream butter & sugar in large mixer bowl.
- Add egg & bananas- mix well.
- Mix flour, baking powder & salt in small bowl. Set aside.
- Mix cinnamon & sugar in a small bowl & transfer to bowl with apples. Stir to coat apples.
- Add flour mixture & milk to butter mixture & beat on medium speed until well combined.
- Add vanilla- beat in.
- Fold in apples.
- Spoon batter into prepared muffin pans (this made 34 muffins)
- Combine additional cinnamon & sugar & sprinkle on top of each muffin before baking (optional)
- Bake for 20 minutes.
- Remove & cool on wire rack 10 minutes.
- Store in airtight container for up to 4 days.

These had waaaayyy too much flour. I double checked to make sure I wasn’t reading it wrong. I should have known, but I followed the recipe exactly. These muffins had very little flavor and were extremely dense (due to the flour). Did you mean to put 4 cups of flour???

How were you measuring your flour? Did you spoon in & level off or scoop into the flour? This can drastically change how much flour ends up in a recipe. I’ll remake & double-check, but I haven’t had an issue in the past.

Super yummy muffins. I made these in a jumbo muffin pan and added double the cream ( I did not use milk). Soft on the inside, perfect crunch on the outside. I give it a 10 out of 10!
