Do you love snack foods? I sure do! I could practically live on appetizers & game day snacks. They are the foods I look forward to the most around here. Which is why I get so excited when we have a handful of leftovers from things like tacos. It gives me a perfect excuse to make delicious snacks like these Baked Salsa Chicken Taquitos that I can’t seem to get enough of. A little crunch with zesty, creamy chicken & the cheese, oh the cheese! SO GOOD!

These are so easy to make. Just take some leftover chicken & toss it in a bowl with a couple other ingredients & mix. Then just spread a little in the tortilla, roll & bake. No deep frying, so it’s quicker & cleaner than a traditional taquito. Plus I used flour tortillas for these, which gives a whole different flavor. So tasty & you can pack in more filling, making these almost a meal. I know just a couple will fill me up. But then I get sad because they are so good & I would love to have more.
Baked Salsa Chicken Taquitos
Baked Salsa Chicken Taquitos
Ingredients
- 1 8 oz pkg. cream cheese- room temperature
- 4 cups cooked shredded chicken
- 1 cup salsa
- 2 cups shredded Monterrey Jack cheese
- 1 small can diced green chilis
- 20 6-inch flour tortillas - room temperature or warmed slightly so they are pliable (they will break if they are cold)
- Salt to taste
- Nonstick cooking spray
Instructions
- Preheat oven to 425 degrees
- Cover a large baking sheet with foil & spray lightly with cooking spray
- Combine chicken, salsa, cream cheese, cheese & chilis in a medium bowl & mix well
- Spread 1-2 tbsp of mix into tortilla & roll up - place seam side down on baking sheet
- Repeat until all the filling is used or you run out of tortillas
- Once finished, spray the tops of the taquitos with nonstick cooking spray & sprinkle with salt.
- Place pan in oven & bake for 15-20 minutes, or until edges and tops are golden.
- Let cool slightly & serve with dip of choice.
