Who loves a good casserole? We sure do. It’s comfort food at it’s finest & our family LOVES that. We really love creamy casseroles that are usually made with leftovers like this Bacon Chicken Noodle Casserole. I’m a stickler for no-waste around here so using up leftovers is key for me. Casseroles are the perfect way to gather up all the little bits of dinners gone by & make them stretch into one more hearty & filling meal. Our kids love love love it.

This works out great when making it for a potluck. Just place it in a foil pan & cover instead of your traditional casserole dish & you don’t have to worry about brining your pan home. Sure makes clean up simple too. Another quick tip, use rotisserie chicken when you don’t have leftovers. Makes it really easy to create a toss & go dinner when time is tight. Isn’t it great to have dinner ready with such little effort? When making for dinner a typical night I use my favorite casserole dish, but those foil pans are so handy for quick clean up.
This really is the ultimate in comfort food.
Bacon Chicken Noodle Casserole
Bacon Chicken Noodle Casserole
Ingredients
- 2 cups uncooked egg noodles
- 3 large chicken breasts- cooked & shredded about 2 cups of shredded chicken- leftovers are great for this or rotisserie chicken
- 1 15.25 oz can whole kernel corn - drained
- 1 15 oz can no salt sweet peas - drained
- 2 cups chopped bacon pieces
- 1 cup milk
- 1 22.6 oz can cream of chicken condensed soup
- 2 tbsp minced onions
- 1 tbsp granulated garlic
- 1/2 cup shredded colby jack cheese
- 1/2 cup french dried onions
Instructions
- Preheat oven to 350 degrees
- Spray 9x13 casserole dish with cooking spray- set aside
- Cook noodles to package directions (usually boil for 6-8 minutes) drain & place in a large bowl
- Add in cooked chicken, corn, peas, condensed soup, milk, minced onions, granulated garlic, cheese & bacon pieces
- Fold to combine & transfer to prepared baking dish
- Top with french fried onions
- Bake 25-30 minutes or until bubbling & hot throughout
- **Note: per reader feedback I do not advise substituting the egg noodles with another kind, such as elbow macaroni. Those tend to soak up more of the moisture & leave the casserole dry.
