How to Make Air-Fried Cheeseburger Egg Rolls
- Add the ground beef to a medium-sized skillet set over medium-high heat. Cook, stirring often until the meat is browned– about 5 minutes.
- Drain the grease and then add the garlic powder, paprika, and salt to the beef.
- Stir to combine and then set the browned beef aside until it is cool enough to handle (you don’t want it to melt the cheese)– about 10 minutes.
- Add the cooled beef to a large bowl along with the cheese, green onion, and pickles. Stir to combine.
- Add about ¼ cup of filling to the center of one egg roll wrapper.
- Beat the egg in a small bowl with a splash of water to create an egg wash. Brush the egg wash around the edges of the egg roll wrapper to create a seal.
Roll and Cook
- Roll the wrapper into an egg roll (the same way you could roll a burrito) by folding the bottom point over the filling, then folding the left and right points into the center, and finally by rolling it upward to seal.
- Lightly grease your air fryer basket with olive oil spray and add as many egg rolls as will fit. Make sure to place them seam-side down so they don’t explode!
- Brush the tops of the egg rolls with the egg wash and sprinkle with sesame seeds or flakey sea salt, if desired.
- Cook at 400F for 5 minutes. Then flip the egg rolls over and cook for an additional 5 minutes.
- Serve warm, with your choice of dipping sauce.
- Store any leftover egg rolls in an airtight container in the fridge and reheat in the air fryer until warm (about 5 minutes at 375F).

Tips and Tricks
- I used 80/20 ground beef– but you could also use ground chicken or ground turkey if you prefer.
- Garlic powder, paprika, and salt help season the meat so it really tastes like a grilled cheeseburger! Feel free to swap 1 tablespoon of your favorite burger seasoning if you prefer.
- Cheddar cheese is my classic go-to cheese for burgers so that’s what I’m using here. Feel free to use any cheese you like.
- Green onions add a subtle, onion flavor. If you prefer sweet or red onions, feel free to use those instead!
- Dill pickles add a bit of acidity and saltiness to help balance out the fat of the egg rolls. Feel free to leave them out or substitute sweet or spicy pickles.
- Egg roll wrappers are a thin, wonton-like sheet of dough that you can find near the tofu in most grocery stores! You could also use wonton wrappers for mini egg rolls.
- The egg helps seal the egg rolls and creates a crisp golden brown exterior.
- You can use relish in place of the chopped pickles.

What air fryer do you use?
Small
We actually have 3 air fryers. I have a smaller one from Phillips that we started with. I have since given that to my son since he’s only cooking for 1.
Medium
But the more I used the air fryer I realized I really wanted a digital screen. It wasn’t any more expensive, in fact- our XL air fryer from GoWISE was less expensive than the Phillips and I love its ease & extra functions.
Plus it comes with a lot of the extra accessories I like to use when cooking with my fryer.
Large
But I when I started working on my second air fryer book, I wanted to change things up. I picked up this LARGE air fryer that has been wonderful. It has Touch Screen Presets plus it is XL Family Size, which is great!
