So, of course, I had to pop some in the air fryer & make these Air Fryer Breakfast Burritos that are the absolute best way to start the day.

These breakfast burritos were a hit with the whole family. I really love making these when we have leftovers from a big family breakfast the day before.
I find that we often make double batches of everything just so that we have leftovers so these breakfast burritos can happen.

They are perfect for my kids who are often running out the door to lecture or labs or work.
They barely have time for meals & being able to toss all these ingredients in a tortilla & pop it in the air fryer for a few minutes is awesome. A quick & easy, handheld meal that is also nutritious can’t be beaten.

How to store leftover breakfast burritos
If you happen to have leftovers, place them in an airtight container or zip-top bag. Keep them refrigerated for up to 4 days. To reheat for serving again – just pop them back into the air fryer and cook until they are hot throughout.
Can these burritos be frozen?
Yes – you can prepare these and then instead of cooking them in the air fryer immediately, just place them in a single layer in a zip-top bag. Toss them in the freezer. You want to make sure they don’t freeze when they are touching or they will all be stuck together.
When you are ready to enjoy them – you will need to cook them for longer than if they were fresh. I have found that depending on the air fryer (since they vary so much in wattage) these need to cook for about 10-15 minutes.

Can I change the ingredients added to these burritos?
Yes, sometimes I like to add a few tater tots or hashbrowns, a sausage link, or even a fried egg that ooses out all that yolk when you bite in. But, of course, that means I have to make that one fresh & not use leftovers. So that particular delicious addition doesn’t happen as often.
What air fryer do you use?
We actually have 3 air fryers. I have a smaller one from Phillips that we started with. I have since given that to my son since he’s only cooking for 1.
But the more I used the air fryer I realized I really wanted a digital screen. It wasn’t any more expensive, in fact- our XL air fryer from GoWISE was less expensive than the Phillips and I love its ease & extra functions.
Plus it comes with a lot of the extra accessories I like to use when cooking with my fryer.
But I when I started working on my second air fryer book, I wanted to change things up. I picked up this Chefman 6.3 Quart Digital Air Fryer+ Rotisserie, Dehydrator, and Convection Oven. It has 8 Touch Screen Presets (Fry, Roast, Dehydrate & Bake, BPA-Free, Auto Shutoff) & Accessories Included. It is XL Family Size, which is great!

What oil sprayer do you use?
First, let me say that I highly recommend that you do not use cooking spray. It will leave a residue on your air fryer basket & cause it to smoke when you use it. I really like this spray bottle – because it gives a nice mist & sprays consistently each time using just vegetable or canola oil. I couldn’t air fry easily without it.
Can these be made ahead of time?
Yes – we love to make these ahead of time. Since we always take an air fryer with us when we go camping – we have found that these make a great meal when we are spending time traveling in the camper.
Just prep them all ahead of time and refrigerate. Pack them with your usual camping food. You can also freeze them and then pack them – letting them thaw in the fridge of the camper throughout your travels if you aren’t going to be gone too long.
Otherwise, I recommend thawing as needed or cooking from frozen using the instructions above.

HOW DO YOU MAKE Air Fryer Breakfast Burritos?
- Combine scrambled eggs, cooked sausage, bell pepper, bacon bits & cheese in a large bowl. Stir to combine.
- Spoon about 1/2 cup of the mixture into the center of a flour tortilla.
- Fold in the sides & then roll.
- Repeat with remaining ingredients.
- Place filled burritos into the air fryer basket & spray liberally with oil.
- Cook at 330 degrees for 5 minutes.
Can these be made low-carb?
Yes – you can actually make these low carb. My absolute favorite tortillas are the ones from Hero Bread and Mama Lupe. They are ZERO carbs – so if you stick to just protein – eggs, meat, and cheese in the filling – you can have a very low-carb meal.

Ingredients
- 6 medium flour tortillas
- 6 scrambled eggs
- ½ lb ground sausage – browned
- ½ bell pepper – minced
- ⅓ cup bacon bits
- ½ cup shredded cheese
- oil for spraying
Instructions
- Combine the scrambled eggs, cooked sausage, bell pepper, bacon bits, and cheese in a large bowl. Stir to combine.

Can these be frozen before air frying them?

To make make-ahead freezer breakfast burritos, allow the burritos to cool slightly, then wrap each in freezer paper or parchment paper followed by plastic wrap. Then store in a large freezer bag in the freezer.
To reheat frozen breakfast burritos in the air fryer, unwrap and use the reheat setting for about 15 minutes at 350.

I love working with raw tortillas. I would just say to cook them lightly and keep them warm so they don’t get too stiff when working with them.
