Do you love banana bread? My kids love it so much that they purposely ignore the bananas we buy just so they will ripen to the point where we have to make bread with them.
But this time I decided to make this Air Fryer Banana Bread that is just perfect for two.
When I first got my air fryer, I honestly thought it would be used primarily for making all our game-day snacks. I didn’t know I would be able to use it to make breakfasts and many desserts too.
What I really love about it is that I can feel a little less guilty about the foods we are eating because of the reduced oil used in the cooking process, thanks to the air fryer.

I mean, really – banana bread, made in the air fryer. It is as easy as whisking the ingredients together, pouring it into the pan and letting the air fryer do the rest.
No waiting while pre-heating the oven and it keeps the house cool, which makes this great for the summer too.

Can I add other ingredients to this recipe?
Absolutely. We used walnuts in this one. But it is also great with chocolate chips, pecans, pistachios and even macadamia nuts
What air fryer do you use?
We actually have 3 air fryers. I have a smaller one from Phillips that we started with. I have since given that to my son since he’s only cooking for 1.
But the more I used the air fryer I realized I really wanted a digital screen. It wasn’t any more expensive, in fact- our XL air fryer from GoWISE was less expensive than the Phillips and I love its ease & extra functions.
Plus it comes with a lot of the extra accessories I like to use when cooking with my fryer.
But I when I started working on my second air fryer book, I wanted to change things up. I picked up this Chefman 6.3 Quart Digital Air Fryer+ Rotisserie, Dehydrator, Convection Oven. It has 8 Touch Screen Presets (Fry, Roast, Dehydrate & Bake, BPA-Free, Auto Shutoff) & Accessories Included. It is XL Family Size, which is great!
HOW DO YOU MAKE Air Fryer Banana Bread?
- In a large bowl, whisk together flour, salt, and baking soda.
- Place bananas in a medium bowl and mash until very smooth with a fork or potato masher.
- Whisk in sugar, oil, sour cream, vanilla, and egg, making sure all ingredients are completely smooth.
- Fold into dry ingredients until just combined. Don’t over-mix.
- Gently stir in walnuts if desired.
- Transfer the batter into a non-stick 6- 7” round baking pan and place the pan inside the air fryer basket.
- Bake at 310 degrees for 33 to 37 minutes, or until toothpick test in the middle of the bread is clean.
- Allow to cool in the baking pan on a wire rack for at least 20 minutes before removing.

Ingredients
- ¾ cup all-purpose flour

- 2 ripe bananas
- ½ cup granulated sugar
- ¼ cup vegetable oil

For the banana bread the ingredients list says sour cream but then in the steps it says to fold in yogurt? Are they interchangeable or do you use one and mistyped the directions?

For this recipe, I used sour cream. When writing the book I was reworking my family recipe that uses yogurt in order to make it work better for the cooking in the air fryer. It was a typo when I was transferring it from my book notes to the post. Thanks for letting me know.

Hard to say how much time you would need. Even with a conventional oven recipe, cutting a recipe or changing it to muffins doesn’t necessarily mean half the time. You may need to just keep checking them until they are done if you decide to give it a try.

I only have a 9″ round cake pan that comes with my AF. That is almost double the area of a 6″ round pan. Any problem in doubling the recipe for the 9″ pan? Then what would you expect the cooking time to be?

I have never tried it, so I can’t say how it would turn out or how long the cooking time would be. I’d probably do 1-1/2 of the recipe as double probably won’t fit in a 9″ pan when you account for the rise. I’d also just start watching the time after you reach the original time called for in the recipe. I usually set the timer for 3-5 minutes at a time when I don’t know how much longer I need to cook for.
Keep an eye on it to make sure the top isn’t over-browning. Please let me know how it goes.

No the temperature will not change & the timing should be pretty close. Keep in mind that all air fryers, like other small appliances, perform a bit differently. Some will run hotter or possibly take a bit longer. It’s all about getting to know your machine.

I’m sorry to hear that. So there are a couple of different things. First using colder water can cause the glutens to leak out, and this will make your dough sticky. Make sure that you are using warm water when you mix your ingredients to make your bread dough.
Also, too much flour & not enough water can cause crumbly bread – people often do this if the dough is too sticky & they add more flour rather than kneading through it.
This will then make the dough too dense & could be why it didn’t bake correctly.
Other culprits can be over-proofing or not kneading enough – these are things you need to do to get a good structure. Kneading is what forms the gluten, makes it less sticky & more stretchy.
A lot of times I will turn the sticky dough out onto a well-floured surface, dust with a handful of flour & knead it really well, adding pinches of flour as needed.
Okay, thank you. I don’t know a lot about making bread. I’ma great cook and I bake a lot but I’ve NEVER been able to cook bread. Every time I try, it never comes out right. I get so disappointed and just never know what I’m doing wrong. I follow instruction all the time. I kept adding flour until u saw the dough come away from the bowl as you mentioned. I’ve seen videos of it to see how it should look and that’s what I kept adding more flour. I did use warm water but didn’t measure the temperature.

The temperature is a good part of it. I was never successful before I started using a thermometer for the yeast. Otherwise, you either kill it because the water is too hot, or it takes so much longer than the recipe calls for because the water is too cold. The cold water is what also makes it more difficult for it to become stretchy and perform as a bread dough should.

I have not tried it with that type of pan. I would assume that if it fits, that’s fine. But I don’t know about the time – you may have to keep watching it, possibly tent the top to keep it from over-browning if it still needs to cook in the center. I would imagine that it would take longer since a loaf pan is deeper than the other pan. However is it narrower, so I could be wrong. Please let me know your results.

Why does the photo show a loaf yet the recipe calls for a round pan?

So sorry that is so upsetting to you. The round pan is what fits in most air fryers – but you can use any 6-7″ pan with tall sides, that is air-fryer-safe. The recipe is from my cookbook. I made it in the round on when I was creating for the book & also tried it with the pan that came with the air fryer – shown here – which is more square with rounded corners. I didn’t have to change the cooking time since it was so similar in size to a round pan. But, yes, for a regular loaf pan the time would be different. I will note the recipe for those that want to use something different.

Did your toothpick test come out clean? And the inside was still uncooked? Every air fryer is a bit different and they all cook at different rates so in general all cooking times are approximate based on the pan and temperature. You can always cook longer if needed – reduce the heat a bit & tent the top if it is browning too much.

First time baking in my air fryer. Followed recipe and turned out great except it wasn’t quite cooked on the bottom in the middle. I turned it upside down and cooked for another 6 minutes. I did lightly grease the Teflon pan so that may have been the problem. Will try again and and not grease the pan. Tasted really good though. Oh yea, I did add chocolate chips too!

That is GREAT! Since air fryers vary so greatly – the cooking time for most recipes out there will be approximate. I always do the toothpick test & tent with foil if I need to cook a bit longer to keep it from over-browning.

I made this recipe but left out the sour cream because I didn’t have it in a snow storm and added a splash of milk. The total batter made 4 mini Bundt cake pans and I adjusted the time to 310 for 12 mins and they were so good . Great recipe . I also added chocolate chips instead of walnuts.

I have a bake option on my air fryer, is that the setting? Or do you put it on air fry setting?

All of these recipes were created with an air fryer that had only a temperature & timer setting – since not all air fryers have all the additional settings.
You can use the bake setting – but if possible, please just set the temperature & time for this recipe.

This is my first aid fryer baking attempt. I used yogurt instead of sour cream and Stevia instead of sugar. Very tasty but flatter than I expected, probably supposed to be, I m not sure.
Crunchy on top and I think next time I need to leave rack out of bottom.

I hav a GoWISE XL air fryer that I used for this recipe. I used a 6″ round pan. I am an experienced baker and the recipe just didn’t work. After baking for at least 10 minutes longer than the recipe it had a dark crust on the top but was still very mushy and raw in the central core. On a good note, my husband tried the outer ring of the banana bread and said it had a good flavor. Too bad it just didn’t work.

I’m sorry to hear that. Did you try tenting the pan to keep it from browning too much while the center cooked? How did you measure the flour? Did you scoop it from the bag or spoon and level it? This can affect how the batter bakes.
As with cooking in an oven, elevation and climate can also have an effect on the overall time it can take to cook something – which is why all air fryer recipe times are an estimate.

The receipt said 33 min min only took 15 min and almost burnt. Only change I had is I used swerve instead of sugar. The time in my nuwave should be. 15 min. I checked it at 17 and it was dark. The next one I will do 15 min. Thanks for the basic recipe.

This was easy to make and turned out delicious and moist! Followed the recipe exactly other than did not use walnuts. I used a 7 inch round pan made for air fryers. That seemed to work very well. Will make again.

I hate leaving reviews when I’ve modified a recipe, but I think this deserves a review…because it worked SO perfectly for a gluten-free option. I used Bob’s paleo baking mix, instead of flour. And, by air fryer is nowhere NEAR big enough for this recipe. But, I did 3 small 4.75 in cakes, and layered them with banana pudding, for a super cute little birthday cake!

Yes, as long as they fit. I’m assuming they are the mini ones – the baking time would be increased for a standard loaf pan.

Delicious! I used yogurt instead of sour cream and cut the sugar to 1/4 cup of Turbinado sugar and it’s the perfect sweetness for my family. I also added some cinnamon bc banana bread isn’t banana bread without some cinnamon! This tastes like a yummy banana cake and isn’t very bread-y. I just ate some with some buttered pecan ice cream – *chefs kiss*

When working with air fryers they are ALL different in size, wattage, and efficiency. So all cooking times are approximate. Doesn’t sound like you really did anything wrong, it just needed to cook longer. If the top starts getting too brown, you can tent it with foil while the inside continues to cook for a bit longer.
