Preheat oven to 350. Melt butter in a medium pan over medium heat. Add in apples and cook for about 4 minutes. Add in brown sugar and lemon juice. Let boil until apples are softened. Add a cornstarch slurry to the mixture to thicken it up.
Roll out one piece of pie dough into a 12-inch round. Using a 3-inch cutter, cut out 12 to 14 rounds and arrange them on the baking sheet. Re-roll the dough scraps and cut out additional rounds.
Add a drop of the apple pie filling in the center of the circle and then top with strips of dough like you would an apple pie. Bake for 18-20 minutes, or until golden brown.
