This time of year it seems I’m in the kitchen more often than not. I love making goodies for all the holiday parties & to give away as gifts for the neighbors. So when I can create super easy recipes that come together quickly & yet make everyone swoon, I know I have a winner. Like these Rocky Road Clusters, they only take about 5 minutes to prepare, then just pop them in the freezer to set for a few minutes & you are ready to enjoy. You won’t believe how everyone raves over these!

While I would usually go with the traditional rocky road & use peanuts, this time I decided that I would change it up a bit & use cashews. I have to say, it was a great choice & I highly recommend thinking outside the usual box for these. Pick your favorite nut & mix it on in there.
I was super excited to use my new Flexipan Muffin Tray from Demarle at Home to make these. Typically I would have to place the clusters in a paper wrapper, but those always stick & then you’re left peeling the paper off your treat before you can enjoy it. So using this silicone tray worked perfectly for quick release, no sticking whatsoever & clean up was a snap.
I know what you’re wondering- if it’s silicone & bendable, how do you move it around when it’s full?? Well- this Perforated Baking Sheet is what you set your muffin tray on & it makes everything cook perfectly even, every single time.
These are completely non-stick, so no need to spray, flour or grease before you add your batter. Once your food is cooled in 10-15 minutes, it will literally fall out of the tray with no sticking. I also really love that it has a lifetime warranty. It’s rare to find that these days & I love brands that stand behind their products. Best part- they are oven, freezer & microwave safe – so you really can make anything in them.

Ingredients
- 1 bag 11.5 oz good quality milk chocolate chips
- 1 14oz can chocolate flavored Sweetened Condensed Milk
- 1 tbsp butter
- 2 cups Nuts - I used cashews for this batch
- 1 1 lb bag mini marshmallows
Instructions
- In a large microwave-safe bowl, combine chocolate chips & butter
- Heat in 30-second increments until melted & smooth- stirring in between each time
- Fold in sweetened condensed milk followed by nuts & marshmallows & stir until everything is coated in chocolate
- Scoop 2 tbsp size portions into your Flexipans & freeze for up to 20 minutes to set before enjoying
