30-Minute Strawberry Pie with the delicious, flaky homemade crust is so easy to make. It’s the perfect summer dessert & for all your summer gatherings!
Who loves a good strawberry pie? I sure do. Can you believe that you can actually make one from scratch, crust & all, in just about 30 minutes?
I know, it seems like it wouldn’t be possible, but I can tell you that you CAN do it. Just using my Easy Pie Crust recipe & fresh strawberries makes this one of the simplest desserts.
Perfect for summer if you ask me. I mean, just look at those beautiful strawberries. Top it with a little whipped cream & you have yourself a little plate of heaven right there.

When I was just out on my own my mom & I would meet up for dinner when she was on her way home from work. She had to pass right by my place & it was so nice to just get together for food.
We would have a small entree knowing that we planned on ordering pie later on. Often the restaurant didn’t have my favorite pie flavor on hand, so I would order strawberry instead. It was so light & refreshing, with the perfect amount of sweet.
Homemade Strawberry Pie Recipe
That flaky pie crust was always the best when paired with delicious strawberries. I made it my mission to learn how to make my own.
After a few years, I was able to perfect my pie crust – which is really the basis for a great pie. The rest is simple, quick & easy. You have to make this for all your summer parties this season.
To maximize my time I like to whip up the glaze & get it cooling while the crust is baking. Then I pop both the crust & glaze in the freezer for a couple of minutes to bring the temperature down more quickly.

Then I can assemble & get it chilling as fast as possible. My family is not so patient when it comes to dessert. So they are often begging for a slice of this as I’m still making things. It’s so good – I know your family will love it.
Here are some commonly asked questions
Can I use frozen strawberries?
Yes, absolutely, that will work just fine. Just be sure to thaw them & pat them dry before using. But I highly recommend using fresh berries when possible as the frozen ones tend to get soggy when thawed.
Can I use gluten-free flour for the pie crust?
I’m not sure just yet. I have been meaning to give this a try but haven’t had a chance. If you do try this, I would recommend using a 1:1 flour like this one as I don’t believe it would require additional ingredients that are typically called for when trying to make recipes that call for flour into a gluten-free version. If you do this, please come back & tell me how it turned out.
Strawberry Glaze
Can this strawberry pie be frozen?
I haven’t tried it yet. Given that it is supposed to be served cold, I would imagine that if you wrapped it properly before freezing that it would be just fine. Just keep in mind that the crust might not be flaky after being frozen so I do recommend serving this fresh.
How many can this serve?
This pie makes about 6-8 slices depending on how large you cut them. So if you are feeding more than just your family, I recommend making 2.

Can this recipe be doubled?
You can double to make 2 pies. Just double the crust, cut the dough in half, and prepare it for 2 pies. You can also double the glaze, but the timing to get it to the perfect consistency might increase a bit. Just really watch it during the cooking process.
HOW DO YOU MAKE Strawberry Pie?

- Preheat oven to 425 degrees.
- Combine flour, salt, sugar & butter in a large bowl.
- With a pastry cutter start working the butter into the dry ingredients until it looks like crumbles.
- Once you have reached a crumbly texture add the water.
- Work it together with your hands pressing & lightly kneading it together until you have a moist ball that holds together well.
- On a well-floured surface – place the dough.
- Flour your rolling pin & start working from the center pushing outward in all directions.
- Once you have stretched the dough large enough to fill your pie plate, transfer that dough to your plate.
- Flute your edges.
- Poke holes in the bottom of the crust with a fork & bake for approximately 15 minutes. Remove & cool.
Glaze
- Put the water, sugar & cornstarch in a saucepan and bring to a boil.
- Whisk constantly until it becomes thick. For about 1-3 minutes.
- Then whisk in Jell-O & cook for a minute longer.
- Remove from heat & let cool for about 10min.
- As the glaze cools, place strawberries into the baked pie crust.
- Pour the glaze over the strawberries.
- Refrigerate until set.
Can I make this recipe with a frozen pie crust?
Yes- of course you can make this with a frozen pie crust. Just make sure to follow the package directions for how to prepare it and make sure it is baked prior to adding your strawberries and glaze.
What is the best way to store leftover strawberry pie?
The easiest way is to add some plastic wrap or foil over the top of the pie plate & store in the refrigerator. Please enjoy this pie within 2-3 days.

30-Minute Strawberry Pie
Ingredients
Crust
- 1¼ cups all-purpose flour
- ¼ tsp salt

- ¼ cup ice water
Glaze
- 1 cup water
- 1 cup sugar
- 1 box strawberry Jell-O 3oz.
- 3 tbsp of cornstarch

- 4-6 cups fresh strawberries quartered & hulled
