Now that the kids are older & often at work or with their friends, the hubs & I are in this “pre-empty nester” stage where we are making smaller meals for just the two of us.
That also means we are making smaller dessert recipes. So having mug cakes just makes more sense for us. I can whip up any flavor we are craving in just a couple of minutes without the commitment of having a whole cake to finish off later.
You can’t beat that. In this case, we are both pretty fond of coffee cake & so being able to have a personal-size coffee cake in just a couple of minutes is so ideal.
Just look at that crumb topping. YUM-O! That is my favorite part. Honestly, I love this so much that I find all sorts of ways to justify making this not only for dessert. It really does pair well with coffee in the morning too.

5-Minute Coffee Cake for Two
Ingredients
- 2 tbsp butter
- 4 tbsp all-purpose flour
- 2 tbsp brown sugar
- 1/2 tsp cinnamon
- 1-1/4 cups all purpose flour
- ¼ cup sugar
- ½ teaspoon baking powder
- ½ teaspoon cinnamon
- ½ cup milk room temperature
- 4 tablespoons butter melted & cooled
- 1 teaspoon pure vanilla extract
Instructions
- Combine first 4 ingredients in a small bowl & whisk together until it looks like wet sand- set aside.
- In a small bowl, whisk together flour, sugar, baking powder, and cinnamon.
- Add in milk, butter, and vanilla, whisking well in between each addition.
- Using 14-oz (or larger) microwave-safe mugs (straight sides works best), divide the batter between each mug.
- Sprinkle on the crumb topping.
- Microwave both mugs together for 2-3 minutes on high.
- Allow to cool for a couple of minutes before serving.

Why is there no coffee in the coffee cake?

The name coffee cake doesn’t actually refer to the ingredients or the flavor of the cake. It is more in reference to what you are supposed to pair it with – coffee. This cake is meant to be enjoyed with your morning coffee and it absolutely compliments it so well. Traditionally coffee cake has never actually had coffee as one of the ingredients. So not really fair to give a 1 star on a recipe when this is made as it should be.

No – clearly a glitch -the directions say to microwave 2-3 minutes on high. Not sure where the time totals pulled from when I converted to a different recipe card.

5 minutes to make it? Not true. 3 min in microwave leaves 2 min to gather 11 ingredients, get butter softened, milk to room temperature, mix wet ingredients in one bowl, dry in another, mix together, then make the topping. You have to be a magician to do all of that in 5 min. Not likely.

Obviously the 5 min timeframe isn’t including the time for butter to set to room temp. It’s the time it takes once you’re ready to prepare. That’s very obvious. You just wanted to find fault.
