It’s no secret, we love snack foods & appetizers here in this house. Game day, party time & fun gatherings with friends are where it’s at & we take it very seriously. So between all the food-centered events, we have had & then of course game night with the neighbors I have been on a big kick to bring some super awesome appetizers to the gatherings. You know, when you create & write about food for a living, your friends expect you to WOW them each & every time you get to feed them. It can be sort of intimidating, but always a fun challenge. It’s really great to make filling appetizer foods that can double as a meal because there’s always so much going on. This time I decided to make some Roast Beef Open Faced Mini Sandwiches.
Roast Beef Open Faced Mini Sandwiches
I started with some leftover roast beef & some cheese. When creating, I chose to use shredded mozzarella & shredded sharp cheddar along with some garlic butter, tomatoes, olives & fried onions.
It’s really simple to make these. Just top your bread with meat, drizzle with garlic butter, top with cheese & broil until the cheese is melted & the meat is crisp on the ends. Then you top with the remaining ingredients for a super tasty snack!

Roast Beef Open Faced Mini Sandwiches
Ingredients
- 6 ciabatta rolls
- 2 cups cooked roast beef
- 1 cup shredded mozzarella
- 1 cup shredded sharp cheddar cheese
- 1/4 cup garlic butter - melted
- 1/3 cup diced tomatoes
- 1/4 cup sliced olives
- 1/4 cup fried onions
Instructions
- Set the oven to broil
- Lay out the rolls on a baking sheet - insides up
- Add about 2 tbsp roast beef per sandwich face - more or less depending on size of rolls
- Drizzle melted garlic butter over the top of each
- Sprinkle both cheese varieties onto each mini sandwich
- Broil 5-10 minutes or until cheese is melted & tips of roast beef are browned
- Remove from oven & top with tomatoes, olives & fried onions
- Enjoy immediately
