I sure love slow cooker meals. Anything that can make dinner come together almost effortlessly is a win in my book. One of our favorite easy family dinner ideas is this Slow Cooker White Chicken Chili. We love a traditional chili recipe. But this white chicken chili is so easy & because it is made in the slow cooker, it practically makes itself. I like to toss everything in just before lunch time & let it do it’s thing while I work. When it’s getting close to dinner I toss in the final ingredients, whip up a batch of skillet honey cornbread to have on the side & it’s a dinner the whole family raves over. I especially love this recipe because it makes enough to feed my family full of hungry teens with big appetites & we still have a little left over for lunch the next day.
Slow Cooker White Chicken Chili
Now some white chicken chili recipes call for Northern beans. I like to change things up a bit & use a different variety. With so many different choices in beans, it’s easy to get creative with dinner. With this chili I used White Chili Beans & White Kidney Beans. But because I love to enjoy the most beautiful food I added regular Kidney Beans too just for that gorgeous complimentary color. I know it’s out of the ordinary, but it was just what this recipe needed. Looks & tastes great!

Slow Cooker White Chicken Chili
Ingredients
- 4-6 boneless skinless chicken breasts trimmed
- 1/4 cup minced onions
- 1 tbsp granulated garlic
- 1 tbsp garlic minced
- 32 oz. chicken broth
- 1 15 oz can Kidney beans drained and rinsed
- 1 15 oz can White Chili beans
- 1 15 oz can White Kidney beans
- 1 4 oz can diced green chiles
- 3 cups whole kernel corn
- 2 tsp salt
- 2 tsp black pepper
- 1/2 tsp cumin
- 1 tsp oregano
- 1 tsp chili powder
- 4 oz cream cheese softened
- 1 5 oz can evaporated milk
TOPPINGS:
- sliced avocados
- sour cream
- tortilla strips
- shredded cheese
Instructions
- Add chicken breasts to slow cooker & add all seasonings
- Top with beans, green chiles, corn, chicken broth & stir.
- Cover and cook on LOW for 8 hours or on HIGH for 3-4 hours.
- Remove chicken & shred, return to slow cooker. Stir.
- Add cream cheese and evaporated milk, then cover and cook on HIGH for 20 minutes, or until chili is creamy and slightly thickened.
- Serve with desired toppings.

This looks delicious, Can’t wait to try it. I do have a question. Why is there 2 different garlics (granulated & minced)? Just want to make sure this is right before I make it. Thanks for any help you can give me. 🙂 Have a wonderful and Blessed Day.

I like to use the granulated garlic to give a light overall enhancement to the chili since it dissolves- while the minced garlic will give those pops of garlic in random spoonfuls. You don’t absolutely have to use both, especially if you aren’t a big garlic fan. It’s not overpowering or noticeable, it just keeps something like this chili from being too bland. Also, remember that garlic salt is not the same as granulated garlic. A lot of people like to sub the two & that added salt can really ruin things.
