I just love easy slow cooker recipes. I use them all throughout the year because slow cooker meals are great for comfort food in the winter & also perfect for getting dinner on the table without running the oven in the summer. So because we use our slow cooker all the time I have loads of awesome recipes to keep our meals new & exciting. One of our absolute favorite dinners is beef lo mein. But did you know you can make that in the slow cooker too? Yep, Slow Cooker Teriyake Beef Lo Mein is so simple that I often pass along the task of this dinner to my girls – who are 16 & 13. They really love to help with meals & we think it’s great that they will know how to really cook well for themselves when they are on their own. They are getting lots of practice here.
Slow Cooker Teriyake Beef Lo Mein
It’s as simple as slicing the meat & combining it with a few ingredients in the slow cooker. Then about 30 minutes before it’s done, add in your veggies. For this we chose broccoli & carrots. You could also add water chestnuts, snow peas or anything else that you love in your low mein.
You can use spaghetti noodles or rice noodles for this. I wanted a thicker noodle, so I chose spaghetti this time. Oh man, do I love lo mein. I especially love making it at home because, honestly, when I order take-out it’s loaded with a bunch of things I don’t really care for. Making it from home is how I end up enjoying every single bite. Oh my goodness – it’s just so good!
I used Soy Vay Veri Veri Teriyake Marinade because it really makes the meal come together quickly. I don’t want to do a whole lot of prep with making sauces & the flavor of this marinade is fantastic! Slow Cooker Teriyake Beef Lo Mein
Ingredients
- 3 lbs flank steak - sliced thin
- 1 cup Soy Vay Veri Veri Teriyake Marinade
- 1 cup beef broth
- 1/2 cup beer
- 2 cups broccoli florets
- 1-1/2 cups shredded carrots
- 1 tbsp minced garlic
- 2 tbsp minced onions
- salt & pepper to taste
- 3-4 cups cooked & drained spaghetti noodles
Instructions
- Combine flank steak, marinade, broth, beer, garlic & onions to slow cooker.
- Cover & cook on HIGH for 4 hours
- In the last 30 minutes, add in broccoli & carrots- stir & cover for remaining time
- Once meat is done cooking, add in cooked noodles & toss to combine
