When I was growing up my mom & I had a favorite candy shop. We would stop in every holiday to pick up enormous amounts of goodies to not only enjoy but to give as gifts. One of my favorite treats there was the chocolate caramel.
My mom would always pick up some for me & I just loved it. Once I moved out of the house she would send me a box of chocolates from this store & a package of the chocolate caramels would be included.
I looked forward to it every holiday season. But now that she’s gone, this tradition has unfortunately stopped & I’m left feeling like I still need my chocolate caramel candies. So I decided that I would just make my own & I’m so glad I did.
Homemade Chocolate Caramel Candy
These are incredibly delicious & every bit as good as I remember as a kid. I really couldn’t get enough of these & I have to say, it was really difficult to want to share with the family. These brought back so many memories & made me smile.
These make the best gifts for neighbors because you can make multiple batches & then spread them out between several houses. It takes about 20 minutes plus chill time & the kids had so much fun helping me wrap them all up in the wax paper squares.

Chocolate Caramel Candy is a type of candy that consists of chocolate and caramel.
How to store Chocolate Caramel Candy?
These caramel candies will keep for up to 2 weeks when stored in an airtight container at room temperature. I don’t recommend refrigeration since they will become far too hard to chew when cold.
How do you make Easy Chocolate Caramel Candy
- Line a 9X9 pan with parchment paper & spray with cooking spray.
- In a large saucepan, bring sugar, corn syrup & chocolate to a boil over medium heat.
- Add heavy cream & continue to stir.
- Stir in more cream.
- Add the remaining cream & cook until the temperature reaches 248 degrees.
- Immediately pour the mixture into the prepared pan & refrigerate until firm.
- Use the parchment to lift the candy out of the pan.
- Cut into 1-inch squares.
- If you wish to wrap the individual pieces in waxed paper, you will need about 48 3×3 squares of wax paper to wrap & twist the ends.
Do I have to use a candy thermometer?
Unfortunately, yes. That is the only way to know you have reached the right temperature for this caramel to set up correctly.
*Note – do not use the clip on the side of the candy thermometer to attach it to the pot. I have found that when it is resting against the side of the pot, it makes that area of the pot heat higher than the rest resulting in not only an inaccurate temperature reading but also burnt food in that area.

How many can this serve?
Well, that will depend on how large or small you cut the pieces. But I was able to get 48- 1″ squares from this batch.
Can chocolate caramel be frozen?
Yes, you can freeze this chocolate caramel. Make sure to freeze either in a single layer or place a piece of parchment in between the layers before freezing. Thaw in the refrigerator overnight and then leave at room temperature once thawed.

Can this recipe be doubled?
Because the cooking time would change with the volume of the ingredients, I don’t recommend doubling this recipe. Since it is so quick to make, I usually just do several batches back to back.

Easy Chocolate Caramel Candy
Ingredients
- 1 cup granulated sugar
- ¾ cup light corn syrup
- 2 ounces unsweetened chocolate crumbled
- 1½ cups heavy whipping cream divided
Instructions
- Line a 9X9 pan with parchment paper & spray with cooking spray.
- In a large saucepan, bring sugar, corn syrup & chocolate to a boil over medium heat, stirring continuously until smooth.
- Add ½ cup heavy cream & continue to stir constantly until a candy thermometer reads 234 degrees.
- Add another ½ cup of the heavy cream & bring the mixture back up to 234 degrees, still stirring constantly.
- Add the remaining ½ cup of the heavy cream & this time cook until the temperature reaches 248 degrees.
- Remove from the heat and immediately pour the mixture into the prepared pan & refrigerate until firm.
- Use the parchment to lift the candy out of the pan.
- Cut into 1-inch squares.
- If you wish to wrap the individual pieces in waxed paper, you will need about 48 3×3 squares of wax paper to wrap & twist the ends.
