Ahhh. Don’t you just love simple and yummy recipes that make your family scream “Mmmm”? We sure do here! This time of year we love easy recipes that we can just toss in the slow cooker & forget about them until we’re starving later.
Since I have dish duty most nights, I love the easy clean-up that the slow cooker offers too. This soup is a “win, win” for cheese & chicken lovers, which is pretty much everyone in my family! This is a soup we make again & again because it’s so easy & so good too.
We go back for seconds & thirds & most of the time there are never any leftovers. Bon appetite!

This soup takes everything you love about a traditional chicken parmesan recipe & combines it all in a super easy to make slow cooker soup recipe.
We just toss everything in the pot in the morning & let it cook throughout the day. When it’s time to serve, we just add the cheese & croutons on top. It’s the perfect comfort food when the weather is chilly & all you want to do is curl up in front of the fire.

How to Make Chicken Parmesan Soup

Combine all ingredients except cheese & croutons in the slow cooker.

Cook on high for 4 hours or on low for 6 hours.

When you have about 30 minutes left – remove the chicken & shred.

Return chicken to crock pot & continue cooking for 30-40 minutes.

Garnish with croutons & mozzarella cheese when serving.

Storage
This recipe makes a lot of soup so it’s fortunate that it stores well in the fridge or freezer. Leave out the noodles when you freeze it.
Refrigerator: Keep your soup in the fridge for up to 3 days. Cover it with a lid or keep it in an airtight container.
Freezing: Freeze chicken noodle soup (without the noodles included) for up to 3 months in a freezer-safe container.

Ingredients
- 6 boneless chicken breasts
- 1 tbsp minced garlic
- 32- ounce chicken broth
- 28 ounce can crushed tomatoes
- 15 ounce can tomato sauce
- 2 tbsp granulated garlic
- 1 tbsp season salt
- 2 tbsp dried chopped onions
- salt & pepper to taste
- 2 cups loosely packed fresh basil - torn
- Several slices fresh mozzarella cheese
- 2 cups croutons
