A good breakfast is so important to kick the day off right. With kids going back to school I’m sure this is something that is on the minds of all moms right now. I really love making homemade breakfasts as often as I can & it doesn’t have to be difficult, expensive or time-consuming. Things like this quick & easy homemade granola recipe can keep everyone well fed throughout the week.
Pumpkin Cranberry Granola
Just look at all that deliciousness in there. Dried cranberries & walnuts really make this pumpkin granola a favorite in this house. All those fall flavors packed into one little bowl can’t be beat.
The best part is that I usually have all the ingredients on hand. But to pick up all that you need to make this granola (if you didn’t have any of these ingredients already) it would cost you less than $20 & that would make probably a good month’s worth of cereal if you enjoyed it every day. This recipe makes 6 teen size servings & I only used a small fraction of my ingredients. I could definitely get a whole lot of breakfasts out of all these ingredients. It doesn’t have to cost a lot to send your kids off to school each day with something good to keep them from being hungry.
I picked up the oats because it was one of the items participating in the Hunger Is campaign at Albertsons. Because 3 out of 5 public school teachers report regularly seeing students coming to school hungry, Albertsons has created the Hunger Is program where they have partnered with brands to raise money to expand the breakfast programs at schools. (Runs 9/1-9/30) When I was in school- you came to school ready for the day. There was only lunch time provided & rarely did a child receive a tax payer/school provided lunch. But now it seems schools are providing 2/3 of a majority of the kid’s meals these days. That is astounding.

Pumpkin Cranberry Granola
Ingredients
- 3 cups oats
- 1 cup dried cranberries
- 1 cup walnuts
- ¼ tsp salt
- 3 tsp pumpkin pie spice
- ½ cup pumpkin puree not pie filling
- ½ cup raw honey
- ¼ cup coconut oil
- ½ tsp vanilla extract
Instructions
- Preheat oven to 300 degrees & line a baking sheet with parchment paper- set aside
- Combine oats, salt & pumpkin pie spice in a large bowl
- In a small saucepan, combine pumpkin puree, honey, coconut oil & vanilla
- Heat over medium, whisking until it's warm & all ingredients are combined
- Immediately pour over oat mixture & stir to coat well
- Spread out on prepared baking sheet & bake 25-30 min - stirring half way through
- Cool on baking sheet completely before storing
- Once cool, toss in cranberries & walnuts & store in an airtight container at room temperature
