No waffle maker needed to make this breakfast. Grill Pan Pumpkin Spice Waffles made in a cast iron skillet & loaded with great fall flavor of pumpkin spice.
Have you ever heard of grill pan or skillet waffles? They are sort of a hybrid between a pancake & a waffle & they are made without a waffle maker. Which I suppose makes them not actually a waffle at all. But you basically cook the batter in a cast iron grill pan, which is what gives it the grooves of a waffle. They are simple to make & absolutely delicious. I especially like them because I can use my skillet, something I already have & doesn’t take up too much space, instead of having to own & store yet another kitchen appliance. As if they weren’t amazing enough, I then took my love for these skillet waffles & made it even better by loading them with the great fall flavor of pumpkin spice. Oh my goodness these are incredible!

I sure love pumpkin spice this time of year. I look forward to it & can’t wait to start each morning with my pumpkin spice coffee. Then adding these grill pan waffles for breakfast make me one happy girl. That’s for sure.
Grill Pan Pumpkin Spice Waffles
Grill Pan Pumpkin Spice Waffles
Ingredients
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 1 tsp kosher salt
- 2 tbsp raw sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1 1/4 cups buttermilk
- 1 tbsp Pumpkin Spice coffee creamer
- 1/2 teaspoon apple cider
- cooking spray
Pumpkin Spice Glaze
- 1 cup confectioners sugar
- 3 tbsp Pumpkin Spice coffee creamer
Instructions
- Preheat your grill pan over medium heat.
- Prepare a wire cooling rack near your cooking space
- Whisk together the flours, baking soda, baking powder, kosher salt, & sugar.
- In measuring cup, whisk together the creamer, eggs, vanilla, buttermilk, and vinegar.
- Pour the wet into the dry & whisk until fully combined
- Lightly spray grill pan with cooking spray & ladle half a cup of batter into the center.
- Reduce heat to low.
- Let cook 3-4 minutes until crisp, then gently use a spatula & butter knife to carefully lift and flip Cook an additional 3 minutes pressing down to make sure you get those grooves in there
- Then remove and let cool on a wire rack. Repeat with rest of batter.
- Combine glaze ingredients in a small bowl & whisk together
- Drizzle over the top of the waffles & sprinkle with additional confectioners sugar & cinnamon
- Serve immediately.
