I sure hope you all are having a wonderful last few days of summer if you haven’t gone back to a regular schedule already. It’s sure was a scorcher for most of the nation. If I learned anything from all those years living in Vegas, it’s how to stay hydrated & relatively cool. So of course, I have been pulling from my arsenal of refreshing recipes to help keep everyone comfortable around here. One of our favorites is this Raspberry Mint Iced Tea. I almost always have a fresh pitcher of iced tea in the house throughout the summer months. I have a large glass every single day. Most days I drink it plain, no sweeteners or lemon. But once in a while, I love to jazz it up & make something absolutely delectable- like this recipe.

Now, the best part about this is that you can mix up the flavors. Depending on how many berries I have picked from the garden that day will determine what flavor I make. Most of the time it’s blueberry or raspberry. Sometimes I remember to save out a few blackberries when I’m making jam so I can use them in this tea. Honestly, I forget- so making the blackberry version of this almost never happens.

Raspberry Mint Hard Iced Tea
Ingredients
- 4 raspberries + more for garnish
- 4-6 mint leaves + more for garnish
- 1 tsp granulated sugar
- 1 tbsp lemon juice
- 8 oz freshly brewed black tea
- 1 oz whiskey or bourbon
- Ice
Instructions
- Place 4 raspberries, 4-6 mint leaves, lemon juice & sugar in the bottom of glass & muddle until fully combined.
- Add ice ¾ full.
- Pour tea over ice, add your shot of whiskey or bourbon & stir.
- Garnish with additional berries & mint sprig.
