Can I tell you something? One of my first jobs was at a restaurant & one of the perks was that we could order anything off the menu for our lunch break.
It was awesome because I loved the food there. Sometimes I would get the chicken fingers & a big ol’ boat of ranch dressing.

Oh man did they ever have the best chicken fingers. But my second favorite choice was the potato skins. I can never get enough of those & I would order them all the time.
To this day I always gravitate to game day snacks when we eat out. I love appetizers & I certainly have to have them when it’s football season. So of course for bacon month I just had to make some skins & load them up with bacon.

The thing that always kept me from making potato wedges in the past is how long they took to make & how labor-intensive they usually are.
So since I like to really break things down & simplify things, I had to do that with these wedges. If I can find a way to make anything easier then I’m all for it.
I’m obsessed with these. Now that I have them down to just 20 minutes of prep, these will definitely be happening every single weekend in this house. YUM-O!

How many can this serve?
This recipe makes about 12 wedges, so it will depend on how may each person is serving themselves. I like a lot, but find that 4 (or 1 potato per person) is more than enough to be satisfied.

Can this recipe be doubled?
You bet. Like I mentioned, plan for about 1 potato per person. You might need to work in batches depending on the size of your dish for the microwave. We have a large microwave but still can’t put a large dish & still have it turn.
HOW DO YOU MAKE 20 Minute Potato Wedges?
- Wash the potatoes & cut each into 4 wedges.
- Cut out most of the inner part of the potato.
- Place potatoes in a shallow microwave-safe dish & microwave uncovered 10 minutes. (or until tender)
- Remove & brush both sides of each wedge with olive oil & place on a baking sheet.
- Sprinkle with salt & pepper & top with cheese, bacon & chives.
- Broil in oven approx 5 minutes or until cheese is melted.
What is the best way to store leftover potato skins?
Place in an airtight container and refrigerate for up to 3 days. To reheat, just microwave for 1-2 minutes or until hot.

Ingredients
