Hello there my friends! Is it hot where you are? I know you are saying, “Gina, it’s summer- of course, it’s hot”. But here in North Idaho, it’s crazy cool right now.
Like so cool I have only shed my slippers a day or two this whole summer. But that’s not stopping me from wanting a cool treat after dinner.

Only thing is, I have been trying to do Weight Watchers- unofficially. So I have been working really hard to come up with treats that are low point & still make me feel like I’m getting something delicious.
So with just a couple ingredients I was whipped up these super yummy strawberry coconut pops with my favorite pop maker that totally hit the spot.
Dairy Free Strawberry Pops
When it’s summer all I want to do is eat frozen treats. I crave nothing else but something cool & refreshing.
But this whole counting points thing has been a massive reality check. I have to say it was quite shocking when one starts researching how many points are allotted for this or that.
It then becomes quite obvious where the last 30 lbs came from. The mindless eating of whatever I wanted, thinking moderation would help, actually was a bit part of the problem. But I still need to feel like I’m indulging, which is where these pops come into play.
These pops are dairy-free, contain no refined sugar & are just 3 simple ingredients. I was so excited when I tasted them & found that they are creamy, sweet & oh so delicious.
Exactly what I need after dinner to make me feel like I’m getting dessert. But really, they are only 2 points. Not too bad & I think all this counting is helping.
Sure there are times when I really want to over-do it. But if I keep those to a minimum I will be a lot better off in the long run.

Here are some commonly asked questions
Can I use fresh strawberries?
Yes, absolutely, that will work just fine. It might take a little longer for these to freeze since the mixture you pour into the popsicle molds will be thinner than if you were blending the frozen berries.
Can I use a sugar substitute?
I have not personally tried it, so I can’t say how that would turn out. I’m not sure what the measurement would be in relation to the honey. A sugar substitute would be much sweeter than the honey if you used the same amount.

Can this recipe be doubled?
Absolutely! This recipe can be doubled. We love to do this when the weather is forecasted to be super hot. Plus with these being low-calorie and free of refined sugar, I feel a bit less guilty if I have more than one.
HOW DO YOU MAKE Strawberry Coconut Pops?
- Combine strawberries, coconut milk and honey in a high powered blender and blend on high for several minutes or until completely smooth.
- Pour mixture into pop mold & tap down to fill any air pockets.
- Add the top and the popsicle sticks. Freeze at least 4 hours but overnight is best before serving.
- To remove, run the sides of the pop mold under room temperature water until each pop releases, taking care to not let the pops melt too much in the process.

- 13 ounces coconut milk
- ⅓ cup raw honey
Instructions

Hi Cara – that is going to depend on the size of the pops you are making & how full you fill each pop mold. If you are using the same pop maker that I linked to here in this post – https://amzn.to/29CPCHl – you should be able to fill this 10-count popsicle mold & have enough of the mix for maybe a couple more.

You can use either one – I used the regular to make them creamier.
