Blueberry Ice Cream
It’s time for ice cream!!!!! I love it when the weather gets comfortable & I can open the windows & enjoy the sunshine. It also means that it’s time for me to start making all my ice cream recipes. After so many long years living just outside of Death Valley, I have an abundance of tasty desserts that really help to keep you cool. I wasn’t really doing a whole lot of recipe sharing at the time, in fact, I was just dipping my toes into food photography. So there is so much I have yet to share with you all. There are so many recipes that we make ALL.THE.TIME that I can’t believe I have yet to share. It’s one of those things where I create & then think as I’m serving, geesh- I probably should have photographed this. So I’m going to make a better effort to keep up on that this season. I know there are so many recipes you will love because we love them too & I can’t wait to share them with you. To start, this Blueberry Ice Cream that is actually dairy free & not ice cream at all. But that doesn’t keep it from being absolutely scrumptious.
I love to make a super batch of this in the morning after the kids are done with breakfast. Then I just pop it in the freezer & it’s ready by the time we want a treat that evening.
I feel good knowing it’s made with ingredients so good that I would serve them for breakfast. But we can enjoy it as a creamy, cool & refreshing dessert after a warm sunny day. Ahhhhhh- how nice is that?!
Blueberry Ice Cream
Ingredients
- 1 frozen banana
- 1/3 cup frozen blueberries
- 1/4 cup honey
Instructions
- Combine all ingredients in a high powered blender or food processor & blend on high for several minutes or until thick & creamy
- Serve immediately if you love a soft serve consistency or transfer to an airtight container & freeze several hours before serving
