Creamy Chicken Noodle Soup
I love effortless dinner recipes. If I can toss everything into a crock pot, set it & let it go until I’m ready for it- then it quickly becomes my favorite dish.
You see, there are a lot of crockpot dinner recipes out there. Some actually get quite complicated. To me, the slow cooker is meant to simplify the dinner process.
If I spend just as much time preparing a crock pot recipe as I would a stove top recipe- then I really don’t see the point.
So when I work at new recipes it’s all about how I can simplify the process to make it easy.
Take this creamy chicken noodle soup for example. No processed ingredients, but yet it’s a toss & go recipe none the less. Not to mention easy clean up too. I love it & so does the family!
Easy Chicken Noodle Soup
Juicy, tender chunks of chicken, egg noodles & loads of flavor. So there are a couple things I like to do to speed up the process even more.
This is already a toss & go recipe, but to make it even easier I typically use what I call “bag chicken”. These are the frozen chicken breasts that come in the large bag.
It’s not the best quality chicken- but when I’m mixing it in to something like a sauce or soup I think it works just fine. I tend to reserve the fresh, high quality chicken breasts for when I’m grilling & enjoying the piece on it’s own.
When I’m really going to taste the quality difference. The other thing I like to do is toss all this in the crock pot the night before.
Then I just cover & refrigerate until morning. When I come down to the kitchen to get my coffee in the morning I just transfer from the fridge to the cooker part of the crock pot & get it started. That way I’m not trying to get prep done during the busy mornings.
Creamy Chicken Noodle Soup
Ingredients
- 2-3 large boneless skinless chicken breasts
- 1 cup frozen corn or 1 can
- 2 cups frozen peas or 2 cans
- 2 carrots- chopped
- 4 cups chicken stock
- 2 cups water
- 2 cups uncooked egg noodles
- 1 cup half & half
- 1 tbsp minced garlic
- 3 tsp season salt
- 2 tsp black pepper
- 2 tbsp minced onions
- 1/2 tsp dried thyme
Instructions
- Combine everything but the egg noodles & half & half in crock pot & cook on high 4 hours or on low 6 hours
- Add in noodles, cover & cook an additional 30 minutes
- Remove chicken & shred- return to pot
- Stir in half & half & serve

Mm! I wonder if canned coconut milk would act as half and half to make this a kosher option – bc it sounds amazing!
