White Chocolate Spring Cookies
Ever have those times when you find out you have make a whole bunch of treats for some last minute party? I know what I would be thinking- I don’t have time for that. But you know what? I was able to pull a couple things I already had on hand in my pantry to put these adorable little cookies together. You see, I had this big coffee party happening & I went a little crazy at the store picking up all the goodies I needed. I ended up buying way too many treats to add to what I was making from scratch. So I had a whole box of these delicious shortbread cookies that went unopened. I figured I needed to do something with them. So I pulled out some white chocolate I had left over from another recipe & some cute, cute, cute Easter sprinkles & got to work.
I started with just melting the chocolate & flooding it on to half the cookie. Then I added just a pinch of sprinkles & that’s IT! Like – so incredibly simple, right?! I know – I was actually surprised that they came out so stinkin’ cute for as easy as they are to make. I mean, this didn’t take me more than 15 minutes once I decided what I was going to do. Then I popped them into the fridge to get that chocolate to set a little more quickly. That was all & they are just perfect for all our Easter celebrations coming up. You see- it doesn’t have to be complicated or take a whole lot of time to make something perfect for the holiday.
White Chocolate Spring Cookies
Ingredients
- 1 package shortbread cookies
- 1 cup white chocolate chips- in a small squeeze bottle
- 1 tbsp shortening
- 1/4 cup Easter sprinkles
Instructions
- Lay cookies out on a large tray or piece of parchment paper
- Place shortening & white chocolate chips in squeeze bottle & microwave on 50% power in 30 second increments until melted - shaking after each increment
- Squeeze chocolate on half the cookie & fill in
- Add sprinkles
- Place in refrigerator to set for about 30 minutes
