Ready for a delicious warm winter dinner idea? Are you a risotto lover? This recipe is for you! I know when it’s chilly out I always crave something filling, hot, and definitely cheesy.
I also don’t want to be in the kitchen all day. Something about the cold makes me just want to curl up and get cozy. Not work away at the stove.
So I came up with this delicious garlic parmesan (my favorite flavor combo) risotto recipe that cooks in the slow cooker in just a couple hours. It’s incredibly easy. Let me show you!

Easy Risotto
It’s so simple to make this delicious risotto recipe. Just measure out your Arborio into your slow cooker.
Then add in your other dry ingredients- except the cheese and mix. Then add in your wet ingredients, stir, cover, and let cook for 1-1/2 to 2 hours. Add in the cheese at the end and it’s ready to enjoy.

Can I use regular white rice?
Unfortunately no. In order for this recipe to work and for you to get that creamy texture of risotto, you must use arborio rice.
Do I have to use white wine?
Did you know that only about 70% of the alcohol cooks out in most recipes? So maybe you don’t consume alcohol or you are cooking for kids – whatever your reason for wanting to leave out the white wine, don’t worry.
While most recipes for risotto call for wine, it is possible to make it without this ingredient. Just replace it with additional broth. If you still want that pop of flavor, you can add a splash of vinegar or lemon juice along with the additional broth.

Can this recipe be doubled?
Absolutely, you can double this recipe. Just be sure to use the larger slow cooker instead of the smaller version I have linked below.
HOW DO YOU MAKE Garlic Parmesan Risotto?
- Combine broth, rice, olive oil, white wine, onion flakes, garlic powder, salt and, pepper in your slow cooker.
- Cover and cook on high 1½ – 2 hours or until most of the moisture is absorbed. Watch the timing as all slow cookers vary in cooking time and temperature a bit.
- Once the rice is soft and it is a creamy consistency, add in the cheese and stir.
- Sprinkle with some chives or parsley when serving if desired.
What is the best way to store leftover risotto?
Transfer any unused risotto to an airtight container and refrigerate for up to 3 days. When reheating, pop the lid, add a splash of water and microwave until hot, stirring in 30-60 second intervals.

Ingredients
- 4 cups chicken or vegetable broth
- 1¼ cup uncooked arborio rice must be arborio rice
- ¼ cup olive oil
- ¼ cup white wine
- 1 tbsp dried onion flakes
- 1 tbsp garlic powder
- 1 tsp kosher salt
- ½ tsp black pepper
- ¾ cup shredded parmesan cheese

The cheese is added at the very end. It will still be creamy like a good risotto, but the gooey, cheesy factor will be missing. Is there possibly an alternative?

I am so excited to try this. Can you believe I’ve never made risotto, because I hear so many horror stories, and then there’s all that stirring?! But doing it in the slow cooker is not intimidating at all! I even have a package of arborio rice that’s been sitting there waiting for me to get up the nerve to make risotto! 🙂

Why is Village Harvest Arborio rice mandatory?

You just need Arborio rice – I prefer Villiage Harvest because all of their rice & grains are natural and unprocessed as well as being plentiful in antioxidants, fiber, and vitamins. But in general, you just need Arborio rice for risotto as opposed to regular long-grain white rice or brown rice.

I love making risotto and this recipe looks really tasty. However, my boyfriend is allergic to onions, so I’m wondering if you have any suggestions for spice substitutes. If not, that’s totally fine, just wanted to check 🙂

You can just omit the onions in that case. There isn’t anything else I would recommend in that situation.

I have tried this twice now and the liquid does not cook out in anywhere close to the time listed. Am I missing something here ?

Hmmmm, that’s strange. I have a couple of ideas. But all cookers will cook a bit differently – I have some that can take 25-35% more time than some of my others. In fact, my first time making this recipe my cooker made it so hot that it cooked so fast that I needed to increase the liquid with later versions. It is possible that your cooker needs more time. I have searched other slow cooker risotto recipes and most call for 3-3/4 cups to 4 cups of broth + the 1/4 cup of wine. While this is in step with my recipe, it is possible that you might need to reduce the liquid by 1/4 cup & see how that turns out.
What size cooker are you using?

I made this in a small slow cooker (2 quarts). I have never tried doubling it – but I would assume it would work the same if you used a larger cooker. If you give it a try, please let me know how it turns out.
