These Coconut Mocha Pops are made with delicious iced coffee, mini chocolate chips, coconut & slivered almonds. They make for a quick dessert idea & a great way to cool down.
I have mentioned before that after so many years of living in the desert, I have become a master at coming up with quick & easy ways to cool down on the hottest days. Because I like treats my ideas usually involve something yummy too. If it’s cold, refreshing & tastes absolutely delicious – then it’s something that we end up making all the time. Huge bonus if it happens to involve just a couple ingredients & very little time to make.
Last month I shared with you my favorite way to kick start my day with my Iced Coffee Protein Shake. Now my new favorite way to end my day is with one of these Coconut Mocha Pops. In the mornings while I’m preparing my protein shake I can take a couple minutes to prep the pops in the molds. Pop them in the freezer & I have a tasty cool treat to share with the hubs after dinner.
You see -each evening after the dinner clean up we head out to the front porch to sit & talk about our day. It’s a way to set aside a few moments for just us, away from the noise of the kids wrapping up the evening cleaning. It’s really hard to relax & have a conversation when there are multiple vacuums going along with trash, dishes & all the other activity. So a few moments outside with a treat is a great way to relax. Coconut Mocha Pops
Ingredients
- 2 cups International Delight Iced Coffee - Mocha Flavor
- 1/4 cup sweetened coconut
- 1/4 cup mini-chocolate chips
- 1/4 cup slivered almonds
Instructions
- Sprinkle almonds, chocolate chips & coconut in the bottom of each popsicle mold
- Add in iced coffee & place your sticks
- Freeze for several hours to firm
- Enjoy!
