On my weekly shopping trip to Walmart I found this Skinnygirl Popcorn.
Any snacks that say skinny always grab my attention. So I had to buy it.
Here’s what we start with – Skinnygirl Popcorn in butter flavor. It also comes in Lime – which would be a tasty twist. Then we have raw honey, coconut oil, vanilla extract & yogurt covered raisins. I also added some trail mix – but it was last minute -so it didn’t make the shot.
We make our “caramel” first because it has to cool a bit & thicken up before pouring over the popcorn.
This only takes a minute or two to melt the honey & coconut oil together.
Pop your popcorn & add your mix ins while you are waiting for your caramel to cool.

You know how I feel about all those things & how I have been working hard to eliminate those from our family’s diet as much as I can. So I was absolutely thrilled when I read this about Skinnygirl Popcorn.
The mix ins are great too. With regular caramel popcorn I would mix in some chocolate covered candy or marshmallows – or both. I have been known to mix in all sorts of things – but you know, this was just as good & I didn’t feel like I was missing out on any of that.
Skinny Caramel Popcorn
Ingredients
- *Note- this is a family size recipe
- 3 bags Skinnygirl Popcorn - popped
- 1 cup yogurt covered raisins
- 1 cup trail mix of choice
- 1/2 cup coconut oil
- 1/2 cup raw honey
- 1/2 tsp salt
- 1-1/2 tsp vanilla extract
Instructions
- Starting with the sauce
- Combine coconut oil & honey in small sauce pan & heat on medium until coconut oil is melted & the two are blended.
- Remove from heat
- Add salt & vanilla - stir & set aside to cool
- Meanwhile- pop popcorn & place in a large bowl
- Add your desired mix-ins
- Once your "caramel" is cooled slightly it will look like thicker, milky honey
- Pour over your popcorn mix & stir to coat evenly
- Enjoy!

That sounds super good! I make my own skinny unprocessed popcorn in my air popper and then with some oil and salt and sugar on top!
