Ingredients
- 7 peeled- diced pears
- 3 tbsp lemon juice
- 1 cup packed brown sugar
- 1 tbsp ground cinnamon
- 1 tsp ground nutmeg
- 3 tbsp cornstarch
Instructions
- Dice pears & toss with lemon juice in medium - large bowl.
- In separate bowl- combine brown sugar, cinnamon, nutmeg & cornstarch- whisk to combine. Set aside.
- Transfer pears to 2 qt saucepan & heat over med-high heat about 8 minutes.
- Some of the pears will break down into a thick liquid like sauce but you will still have some pear chunks.
- Add your dry mixture & whisk to combine & incorporate well.
- Heat & stir constantly until mixture thickens - about 2 minutes.
- Remove from heat & let sit 5 minutes before transferring to your jars.
- Store in refrigerator or freeze.

Can you tell me how many cups your 7 pears is I have a pear tree but the pears are definitely smaller than you would find in the store and different types of pears are different sizes

A rough estimate would be about 6 cups.

Great easy recipe. I substituted Splenda brown sugar blend. Turned out great. Rather than freeze I put in pint jars and hot water bath for 30 minutes. Great seal and can keep on pantry shelf. Don’t have to wait on thawing when I’m ready to use.

Did you have any siphoning or any kind of problem due to the cornstarch? I wanted to can this also but I’ve always heard people say don’t add flour or anything that would be a thickener. Thank you.

This recipe has not been tested for canning. Please store in the freezer or refrigerator.

This should be enough to fill 1 pie crust with a bit leftover.

I have several bags of frozen pears how would i measure out enough to equal 7 pears for this pear filling or do you suggest another recipe

It’s hard to really say since I can’t see them personally. I think I’d probably figure out how many slices (if that is how they have been frozen) would make a whole pear if put back together. Then go from there. I don’t know how thin they have been cut, so I don’t know if it would be 4 quarters, 8, 16 or whatever so it’s hard to give advice on this.
