Homemade Caramel Apples Recipe

If you caught my post the other day you know I shared a recipe for homemade caramel.
While I was making said caramel I just couldn’t resist the urge to smother those giant apples with the gooey goodness.
I mean, they were just begging to have something fabulous done with them.
Years ago we lived near Virginia City, NV. It’s this old mining town turned tourist attraction in Northern Nevada.
One of the places I would always stop is the fudge shop there. They had these fabulously giant apples all decorated beautifully.
It’s been a good long while since we have been up there since we moved to the Southern part of the state & I missed having those.
So I decided to give it my best shot at recreating my own. Oh yes- I decided to them also dip them in melted chocolate & peanut butter chips too. Just for good measure.
Here are some commonly asked questions
What kind of apples should I use for this recipe?
I find that the firmer, the better when dipping apples. Granny Smith & Pink Ladies are my favorites for this. I tend to stay away from red & golden delicious & leave those for pies.
Do I have to coat these apples in chocolate?
No, you can add the nuts right after you dip these in the caramel if that is what you prefer. I typically like to do 2 batches, one with just caramel & the other with the added chocolate.
HOW DO YOU MAKE Homemade Caramel Apples
- Heavily butter a Silpat sheet or parchment paper. Set aside.
- Insert the sticks into cleaned apples.
- In a 2qt heavy saucepan, combine the butter, brown sugar, corn syrup & sweetened condensed milk. Bring to a boil over medium heat.
- Cook & stir until a candy thermometer reads 248 degrees (firm ball stage) This should take about 30-40 minutes depending on the BTUs of your stove.
- Remove from heat and carefully stir in the vanilla extract.
- Working quickly, dip each apple in the caramel & turn to coat.
- Holding by the stick you can sprinkle with whatever topping you like. OR you can set aside on the Silpat to cool. Be sure to work quickly if sprinkling as the caramel will set fast.
- While caramel is setting, melt the chocolate chips in a small bowl by microwaving in 30-second increments – stirring in between each time.
- Dip the caramel-coated apples in the melted chocolate to coat.
- Immediately sprinkle with peanuts & then set back on the Silpat.
- Transfer to the refrigerator to cool & harden before serving.
Can I use a different type of chocolate?
You bet! These are also great with dark chocolate or white chocolate. You might need to add a tablespoon or two of shortening or coconut oil during the melting process because the fat content is different for those varieties.

How to store caramel apples?
I find that the best way is to wrap them individually with plastic wrap or place them in a paper bag and fold to close. I don’t recommend refrigeration unless the apples have been cut open.

- 2 cups packed brown sugar
- 1 cup light corn syrup
- 14 ounces sweetened condensed milk
- 2 tsp vanilla extract
- 2 cups milk chocolate chips
- 1 cup chopped peanuts opt

I followed the caramel recipe exactly and it was unbelievably delicious! I used eight medium sized pink lady apples. There was enough caramel for at least one more so I just wrapped pieces of setting caramel in wax paper. It may be best to wait a few moments before dipping because it didn’t hold up well on the apples at first. But after a few minutes it was fine. I spooned the thickening caramel over the apples after dipping them. My husband and I just split one and wow!! I sent two with my daughter to a friend’s house and they will love it. My husband and daughter said the caramel was so amazing that chocolate wasn’t necessary. So I skipped that part. I cannot wait to make this with my college kids when I see them next.
