Oh man, the New Year is almost here. This week I tried to take some time away from the office to have some family time. I wanted it to be actual time away & not just the usual weekend when I would be half connected. This was a time where I didn’t pick up my phone, the TV was off & I wasn’t on the computer. Quality family time because one of my goals this year is to really, truly have more family time. Working from home can make it really hard to disconnect from work & it very easily can take over my life if I let it. So after several years of the girls asking me when I planned on teaching them how to use all my mother’s cake decorating supplies we inherited, I decided this was a great opportunity to do just that.
2-Ingredient Funfetti® Cupcakes
The girls pulled out all the mixes & frosting out of the pantry so we could decide what we were going to make. I think they secretly thought that if it was all sitting out, then naturally we would make it all. No-go, but we chose to create some awesome Funfetti® Cupcakes.
I decided to share with them a little trick my friends & I use when making cupcakes that makes them incredibly easy & a little skinnier too. Instead of water, oil & eggs – we use just a can of diet Ginger Ale with the cake mix. Super tasty too!
When they were done baking & cooling I added the frosting to the piping bag & taught them a few different ways to frost the cupcakes. It was so fun.
Of course they both tried to take over when it came to the sprinkles. Everyone loves sprinkles, right?!
I don’t know about you, but these just make me smile. Funfetti® is GREAT for smiles!
2-Ingredient Funfetti® Cupcakes
2-Ingredient Funfetti® Cupcakes
Ingredients
- 1 12-oz can Diet Ginger Ale or 10-Calorie Ginger Ale, room temperature
- 1 box Funfetti® cake mix
Frosting
- 1-2 cans Funfetti® Frosting
Instructions
- Preheat oven to 375ºF.
- Line muffin tins with 18 muffin liners, spritz with a little cooking spray & set aside.
- In a medium mixing bowl, pour the cake mix.
- Slowly pour the diet Ginger Ale into the cake mix.
- Whisk together until all lumps are gone.
- Spoon batter into prepared muffin liners, filling about ¾ full.
- Bake for 10 minutes & then reduce heat to 350 degrees
- Continue baking 8-10 minutes or until they spring back when centers are lightly pressed
- Let cool on a cooling rack.
Frosting
- Transfer to piping bag with large round tip
- Swirl on frosting & top with sprinkles included in frosting can
