Swiss Meringue Buttercream Frosting is a simple frosting recipe that’s easy to make with just a few ingredients. It’s the best frosting for all cake flavors.
Between the months of July & August we seem to have a whole lot of celebrations happening around here. It wasn’t until I realized how often we were having cake recently that we have more reasons to celebrate than I thought. If you remember, A bit ago I made a cake to commemorate when my mom’s birthday was. But then in early August, we have 2 other birthdays in our house. That makes for a whole lot of cake happening & I’m not complaining one bit. The hardest part is keeping things unique so everyone feels special on their day.
I usually let each person dream up their own cake & put in a request for what they would like. The munchkin chose a chocolate high-top cake with Swiss meringue buttercream frosting – naked style. I was happy to do that because I love all those things. Swiss meringue is delicious, I love chocolate cake & making naked cakes is my preferred method.

I just love naked cakes because of their ease & simplicity. My mother would think it’s so funny that people actually want what she would consider the base of the cake decorating. She called it a crumb coat & it was always what happened before the real decorating began. I don’t have her gift for cake decorating nor her patience for it. So I’m completely content making naked cakes from here on out.
Any day with cake is a good one in my book. The fact that I have enjoyed 4 cakes in the last 30 days puts a smile on my face.

Swiss Meringue Buttercream Frosting
Ingredients
- 4 egg whites
- 1-1/2 cups granulated sugar
- 1-1/2 cups unsalted butter at room temperature
- 2 tsp pure vanilla extract
- 1 tsp almond extract
- 1 pinch- pine sea salt
Instructions
- Place egg whites & sugar in a double boiler. Whisk constantly until sugar is dissolved & mixture comes to approximately 160ºF.
- Immediately transfer to a bowl of a stand mixer & whip on high using the whisk attachment until frosting has become thick and glossy- it will form stiff peaks.
- Continue to whip until the bowl feels room temperature to the touch.
- Switch to paddle attachment & drop in butter, 1 tablespoon at a time, beating until smooth after each addition - on low.
- Mix in extracts and pinch of salt
- Store in refrigerator- bring to room temperature before serving.
