Summer grilling just got better with this Grilled Hot Pastrami Sandwich. Combining foil grilling & the love for a pastrami sandwich, it’s delicious & easy!
The weather here has been so nice lately. The temps are in the high 70’s to low 80’s, which means it’s prime weather for being outside & enjoying where we live.
The summers here are sort of the payoff for the 4 months of snow we get in the winter. It’s all worth it when we can have these glorious days that call us to pack up the truck & head to the lake for some family time.
We always plan ahead & pack a good lunch we can enjoy while we are at the lake. Sometimes we pack cold sandwiches & snacks.
This week I picked up some provolone & pepper jack (the favorites in this house) with the idea that we would be heading out to have a picnic at some point.
While I was preparing the sandwiches for our outing I thought it would be so nice to enjoy them hot.
Since there are cooking areas around the lake I decided that I would wrap the sandwiches in foil, rather than butcher paper.
We love to do super simple foil grilling when the weather gets nice because it’s so easy.
Making foil-wrapped sandwiches to grill on the beach was perfect for our outing.
We paired them with some chips & pickles. Definitely the perfect lunch out by the lake.

It’s a quick & easy lunch that makes mealtime fun. These are great for camping too.
As the clouds moved in & pushed us under the pavilion, we were sure happy to have a nice hot sandwich for lunch.

What can I add to this sandwich?
Most of the time you’ll find a pastrami sandwich on rye bread. You can definitely make this on rye bread if you prefer.
Because we wanted these to be more hoagie style, we went with a soft & chewy french bread. You can also add pickle slices, havarti cheese & mustard.
What goes well with pastrami?
If you’d like to change things up, try this recipe with Russian dressing instead of mayo or mustard. It is phenomenal.
How to store hot pastrami?
When you are packing these up for camping or before your hike, make sure they are wrapped tightly & placed in a cooler bag with an adequate number of cool packs. You need to keep those ingredients chilled until you are ready to make these sandwiches.
If you have leftovers after you cook them on the grill, just re-wrap the sandwich & refrigerate until ready to enjoy again. The important thing here is to not let the meat sit out & get warm for more than an hour.
Also, you don’t want the meat to cool too slowly after you cook these. Both of these situations are when bacteria will start to grow. So keep these chilled until you are ready to enjoy them.
Can these sandwiches be enjoyed cold?
Generally, yes. If you want to just assemble these & enjoy right away, that is fine too.
The reason for cooking them over the fire is to melt the cheese & provide a nice, hot lunch – even when out in the wilderness.
But these are definitely still delicious when served cold.
HOW DO YOU MAKE Grilled Hot Pastrami Sandwich?
- Add 1 layer of several slices of pastrami on one-half of your roll.
- Then add 2 slices of provolone cheese followed by another layer of pastrami.
- Top with 2 slices of pepper jack cheese & more pastrami.
- Finally, add 2 more slices of provolone cheese & French dried onions.
- Wrap in foil & keep chilled until ready to grill.
- Bring your grill to approx 350 degrees.
- Once heated, turn heat down & add foil-wrapped sandwiches to the grill.
- Close the lid & “bake” for approx 15 minutes- turning once half way through.
- Once cheese is melted & meat is hot, remove, carefully unwrap & enjoy!

What is a Pastrami Sandwich?
Pastrami on rye is a classic sandwich that consists simply of sliced pastrami, placed on rye bread, and topped with spicy brown mustard.
It was made famous in the Jewish kosher delicatessens of New York City. It was first created in 1888 by Sussman Volk, who served it at his deli on Delancey Street in New York City.
This version here is a twist on the classic – both worth making often.
What to serve with a pastrami sandwich?
Pastrami goes with so many things. You can serve it with cucumber, pickle or fresh pickled cucumber.
Also pair it with salad mix, coleslaw, potato chips, pasta salad, red cabbage that is marinated or pickled, potato salad or onion rings.
What soup goes with pastrami sandwich?
Pastrami really is wonderful when paired with a french onion soup. So if you happen to be enjoying this sandwich at home, cooked on your backyard grill.
If you are camping in an RV & have the ability to make some french onion soup along with this sandwich – it is an excellent pairing.
Can you microwave pastrami?
Yes, you absolutely can. Pastrami is best when “steamed”. To give that steaming effect, you can re-heat pastrami in a microwave.
Just place the chilled pastrami for your sandwich on a microwave -safe plate. Cover with a damp paper towel.
Cook at 25% power for about 3 minutes, adjusting the time slightly as needed.
What mustard for pastrami sandwich?
There is some debate about this. Traditional pastrami sandwiches are typically made with regular, yellow mustard.
But you will also find them made with spicy brown mustard, almost just as often. So, it is really down to personal preference.
Enjoy it the way YOU like it. I add mustard for my family, but since I don’t particularly like mustard at all – I leave it off my sandwich altogether.

Grilled Hot Pastrami Sandwich
Ingredients
- 6 hoagie style rolls or french bread loaf – cut into sandwich size portions
- 2-3 lbs sliced pastrami
- 1 Sliced Provolone Cheese several slices per sandwich
- 1 Sliced Pepper Jack Cheese
- 1 cup French dried onions
- ½ Purple onion- diced opt.
Instructions

When do the purple onions come into the recipe?

My apologies – you can just add them as desired when assembling the sandwich. It’s not a super critical step and when you add them won’t make or break the final sandwich – they just add a little more flavor.
