2 Ingredient Coconut Mocha Pops are easy to make & perfect for breakfast or dessert. I’m sure they’ll be your favorite homemade popsicle recipe this summer.
I’m a sweets lover. It’s really hard for me to go through a day without enjoying something that makes me feel like I’m having a treat. I’m not sure why that is or why it has to be at the end of the day for me to feel satisfied with my treat of choice. Because you see, I could have a massive piece of cake in the middle of the day and that won’t do it for me. It has to be at the end of the day or I’m left craving more.
2 Ingredient Coconut Mocha Pops
Lately, I have been trying to not have that giant piece of cake whenever I want. This means I’m coming up with new & creative recipes to satisfy that sweet tooth. In these hot days of summer, that almost always means some sort of pop or ice cream. Thank goodness for “ice cream” ideas made with things like bananas & coconut milk. It’s so easy to pair either of those things with other ingredients I love.
These pops are just 2 ingredients, coconut milk & International Delight Mocha Iced Coffee. Just blend & pour into the pop mold. It’s really that simple, which makes me happy because it gives me more time to spend with the kids enjoying summer, instead of hanging out in the kitchen making a bunch of dishes. These are so creamy & I love that delicious mocha flavor. It’s just enough sweet to give me what I need, but still light enough that it’s refreshing. A win, win for these hot summer days if you ask me.

Ingredients
- 16 oz coconut milk
- 8 oz International Delight Mocha Iced Coffee
Instructions
- Combine ingredients in a pitcher & stir well until fully combined
- Pour into pop molds, add sticks & freeze a minimum of 4 hours (overnight is preferred)
