Who loves ice cream?? I know I sure do. It was the thing my mom & I always shared together. In fact, once when I first moved out on my own she asked me if I had enough money for groceries. I told her I did & I was fine. But she made sure to let me know that if I ever didn’t have enough money for milk, bread & ice cream, I needed to let her know. To her, those were the staples of life. I’m sure she would have thrown in cake, too, if she was being all inclusive here. Ice cream brings back so many memories & experiences throughout my life. So of course, I like to enjoy it when I can & even make some great recipes with it too. Like these ice cream sandwich pops.
I picked up some ice cream sandwiches while meandering the store one day. (Have I mentioned just how dangerous it is for me to visit the store when I’m not on a tight timeline? I tend to wander when I have time & that means lots of extras end up in the cart.) So the hubs has been asking me if he could have some of these ice cream sandwiches & I keep telling him that I have a plan for them. I’m pretty sure he didn’t believe me & thought they would be in there all summer.
But I finally had a moment to create these decorated ice cream sandwich pops that just make my heart go pitter patter. Just cut, add your stick, dip in chocolate & sprinkle. I know, who knew it could be that easy to make something so good. This will definitely keep everyone from running out to the ice cream truck in the evenings.
You all know I’m a stickler for knowing what is & isn’t in my food. I read my labels & research those ingredients I find. Did you know that most of the ice cream we consume can include something called carrageenan? What is it exactly? It’s a natural food ingredient that allows us to produce and transport simple products such as milk, juice and ice cream. It helps make ice cream transportation for long distances easier & makes ice cream super creamy too. I know I love my ice cream super creamy!
So how exactly is carrageenan is made? It can actually be extracted from seaweed in any home kitchen. The process involves simply cooking seaweed with a little salt, adding a bit of alcohol and then mixing it in a household blender to release the natural carrageenan. That simple.
As you know, food insecurity is a global issue. But with ingredients like carrageenan, products that are healthful, nutritious and safe can be delivered to people in even the most remote locations. It’s not only critical that we continue to include carrageenan in our foods and drinks, it’s imperative that we understand what its use means to millions of people around the world.

Ice Cream Sandwich Pops
Ingredients
- 1 box Ice Cream Sandwich Bars of choice
- 1 cup milk chocolate chips
- 1 tbsp shortening
- 1 cup chopped sprinkles of choice
- 1 cup chopped nuts any flavor you like
- popsicle sticks
Instructions
- Cut each ice cream sandwich in half & insert popsicle stick into the center of the ice cream side about 1/3 the length of the stick- place on a tray & keep in freezer until you are ready to dip
- Combine chocolate chips & shortening in a small bowl & microwave on 50% power for 30-90 seconds, stirring in 30-second intervals
- Once chocolate is melted & smooth, remove pops from freezer & dip each one into the chocolate to coat about half of the pop
- Add sprinkles & nuts before chocolate sets
- Place on a parchment lined baking sheet & store in freezer until ready to enjoy
