Brown Sugar Pineapple Sundae
We lived in the desert of Nevada for nearly a decade. The heat typically becomes oppressive around March or April & stays until about November. So it should come as no surprise that I have a whole lot of frozen dessert recipes. Anything to keep cool during those hot months was welcome & appreciated, that’s for sure. My favorite ones always involve pineapple or coconut or even better, both. This brown sugar pineapple sundae is a sweet caramel-like glaze with the sweet pop of pineapple. Then we drizzle it over a couple scoops of ice cream & it’s absolute heaven. I love the combo of fruity goodness mixed with that caramelized brown sugar. Then the warm sauce melts the ice cream just enough making it extra delicious. I’m already wanting more.

Now if you really want to go all tropical – you could serve this top on of coconut flavored ice cream instead of vanilla. Wow, that sure is delicious!! I sure love coconut ice cream- so this would be the perfect pairing for sure. Of course, I used my favorite ice cream bowls for this because I love them so much. But you could also use this adorable set too.
Brown Sugar Pineapple Sundae
Ingredients
- 1/2 stick butter 1/4 cup
- 2 cups fresh cut pineapple
- 1/2 cup packed brown sugar
- 1 tbsp fresh lime juice
- vanilla ice cream
Instructions
- Combine butter, brown sugar & pineapple in medium saucepan
- Cook over medium heat until butter is melted & sugar has dissolved
- Turn heat down & simmer several minutes
- Remove from heat & stir in lime juice
- While still quite warm, spoon pineapple & sauce over several scoops of vanilla ice cream
- Enjoy!
