Bacon Cheddar & Spinach Quiche Cups are a perfect, savory brunch recipe that’s so easy to make. Baked in fluffy puff pastry- these mini quiches are delish! Perfect for Easter or Mother’s Day celebrations, you’ll want to make 3-4 batches to feed your crowd. But don’t worry, they are so simple & take less than 30 minutes.
Bacon Cheddar & Spinach Quiche Cups
It’s positively glorious outside! Spring is here & I’m so happy to be done with winter. I never thought I would say that after way too many years living without seasons. But this particular winter was just annoying. So I am so happy to be moving on to one of the most beautiful times of the year here in North Idaho. Now that we are well into March it’s time for more great spring recipes too. So today I have joined up with 11 other bloggers to bring you 12 savory brunch recipes! I decided that I would make some mini quiches loaded with spinach, cheese & bacon. I use puff pastry for the shell & oh man these turned out so good! The kids were all over them!
Pair these with our Spanakopita (Spinach Pie) Recipe.
I feel a little bad though. You see, the hubs has been begging me to make him quiche since we got together. That’s like 20 years of begging. I know, I know. I’m not sure why I didn’t do it before, but unfortunately he missed out on these because he was away working. Poor guy. But the good thing is that these are super easy so I can make him some as often as he’s craving them now.
Bacon Cheddar & Spinach Quiche Cups
Ingredients
- 1 sheet thawed puff pastry
- 4 large eggs- divided use
- 1 cup + 2 tbsp half & half - divided
- 1 cup fresh chopped spinach
- 1 cup shredded cheddar cheese
- 1/3 cup bacon bits
- 1 tbsp minced onions
- 3 tsp garlic powder
- salt / pepper to taste
Instructions
- Preheat oven to 400 degrees
- Unfold puff pastry & cut into 9 squares
- Gently stretch each square & place in the bottom of un-greased muffin tin wells
- In a medium bowl, whisk together 3 of the eggs, 1 cup half & half along with spinach, cheese, bacon, onions & seasonings
- Ladle into your puff pastry
- In a small bowl whisk together remaining egg & half & half
- Brush on to exposed puff pastry
- Bake at 400 18-23 minutes or until golden brown
- Serve warm

What is half and half it makes no sense?

Half and Half is a dairy product. It is made of equal parts of whole milk and heavy cream. You can find it in the dairy case with the milk and heavy cream.

Has anyone tried freezing these? Best way to reheat?

You can freeze them. I would thaw overnight in the fridge and then microwave until hot when ready to eat.

Unfortunately those have to be manually calculated and each post individually updated to include that. With thousands of recipes posted here, I just have not had the time to get them all done yet. However, I do highly recommend using one of the online nutrition calculators such as carb manager – I have found that they are far more accurate than the recipe card calculators.
