I love making goodies for the hubs. It’s not uncommon for us to wait for the kids to head to bed & then we head to the kitchen to make ourselves a little treat to share.
Usually while he’s gone for the week I’m busy here making all sorts of recipes. Extra dinner stuff gets packed in containers for him to have for dinners through the week & desserts get saved for when he’s here or when I travel out to the apartment.
The kids head to bed & we have our little something sweet for the night. Just us, usually curled up together on the couch enjoying our favorite show & our dessert.
It’s our time to just have one on one without the family conversation that happens when we are all in the same room.
So when I found out the theme for this month’s 12 Bloggers challenge was “desserts for two” I just had to make this AMAZING Snickers Brownie for 2.
Brownie for Two
Just a little thin brownie loaded with chopped Snickers bars & topped with whipped cream & a cherry. Holy YUM! This was really good. After taking a few bites we decided it would be even more amazing if we broke it out between 2 bowls & topped some ice cream on there too. Yep – every bit as delicious as I imagined it being. Absolutely sinful & worth every bit of guilt afterward too. Life is too short to not enjoy the good stuff!
Snickers Brownie for 2
Ingredients
- 1 tbsp butter
- 6 tbsp semi-sweet chocolate chips
- 1 tsp half & half
- 2 tsp packed brown sugar
- Pinch of salt
- 1/4 tsp vanilla extract
- 1 egg
- 1/4 cup all-purpose flour
- 2 tbsp chocolate chips- for mixing
- 7-10 Snickers minis - chopped
Instructions
- Preheat oven to 350 degrees
- Microwave butter, 6 tbsp chocolate chips & half & half in a small bowl- stir until completely melted & combined - set aside & allow to cool
- In another small bowl, combine brown sugar, salt, vanilla & egg - whisk to combine
- Stir in cooled chocolate mixture
- Fold in flour
- Stir in remaining chocolate chips
- Spread into a small 6.5" cast iron skillet
- Bake 12-15 min
- Top with chopped Snickers while still hot (If you need to stick back in the oven for 30 seconds to melt the candy bars- that's okay)
- Top with whipped cream or ice cream & cherry when serving
