Peanut Butter Jelly Bites
It’s time for peanut butter bash again! The secret ingredient this month- Ritz crackers. Yup! So of course I had to make these Peanut Butter Jelly Bites. You see, when I was growing up my mom would make me peanut butter & jelly sandwiches using Ritz crackers. I thought it was great. Salty & sweet- oh yum. But what I didn’t know was it was mainly because we didn’t have any bread in the house & she was a few days away from payday. So she made what she could with what she had. That was how she was- resourceful. I didn’t know anything about money struggles or anything like that. I was probably no older than 4 or 5 at the time. All I knew was that it was so much fun to have my PB&J on a cracker. Knowing now the reasoning behind her recipe it makes me love it & her all the more.
She would just spread it on. I figured it would be so much prettier if I pipped it on there instead. Then I decided to forego the top cracker for two reasons. The first because it would have made it so much harder to see the jelly. But the second because I think it skews the cracker to filling ratio. That top cracker really makes the whole snack “cracker heavy. So lose the top & they are just perfect.
Peanut Butter Jelly Bites
Ingredients
- 1/3 cup creamy peanut butter
- 1/4 cup jelly - jam - preserves in your flavor of choice
- 12 Ritz crackers
Instructions
- Lay crackers out on a cutting board or baking sheet to give yourself a good work space
- Pipe peanut butter on to the crackers in a swirl pattern using a pastry bag
- Top with a dollop of your favorite jelly
